Success!

My desk is clean, organized, and ready for work! I even dusted it! ;-)

Hi, Murphy!

I did a couple of “arts & crafts” projects while cleaning.

Lunch

I tried something new for lunch today. I had a small zucchini and a yellow squash that needed to be eaten ASAP, so I made them into squash fries– sort of like my sweet potato fries.

Here’s a quick tutorial: chop zucchini/squash into “fries,” put in Tupperware container, add 1 tbsp olive oil, 2 tbsp ground flaxseed meal, 1 tbsp whole flaxseeds, and salt + pepper to taste.

IMG_0004.JPG

Put on cover and shake like crazy.

IMG_0005.JPG

Spread fries on baking sheet and then bake for 20-25 minutes on 475*F.

IMG_0007.JPG

My squash fries turned out really well. They were sort of crispy on the outside, but still soft and “squashy” on the inside. I really liked the grainy texture and flaxseeds on the outside.

IMG_0010.JPG

IMG_0011.JPG

To go with my “fries,” I made a couple of dipping sauces: pesto + sour cream and buffalo sauce + Four Cheese Rosa sauce.

IMG_0015.JPG

Both dipping sauces were pretty good, but (not surprisingly) I preferred the one with buffalo sauce. ;-)

IMG_0021.JPG

In honor of Cookie Friday, I attempted a new cookie recipe, but it totally bombed. :-? These cookies were edible, but nothing special. Boo.

IMG_0019.JPG

I also added a Siggi’s yogurt to lunch for some extra protein.

IMG_0023.JPG

IMG_0025.JPG

A little while after lunch, I snacked on a pear. Now, I am hungry again.

Scanpan Giveaway

Thanks to everyone who entered the Scanpan Giveaway! Doesn’t Sur La Table have the best stuff?!

Here’s your winner: 329

#329 Katie

Despite all the great products on there, I actually really do need the skillet you’re giving away–my roommate totally wrecked the one I have now so I’m currently skillet-less…

Congrats, Katie!! Please email me with your full name and mailing address to claim your prize.

I still need to finish packing for my trip tomorrow. I feel so unprepared! I need to get my act together ASAP!

I’m meeting Julie at the Body Pump 73 launch tonight. I’m so excited to meet her in person. Hopefully, BP 73 doesn’t scare her– I’ve heard it’s really tough!

Nice job on the office!! I just cleaned mine up as well – I literally couldn’t walk around in it – total anxiety. A clean, fresh space is just the ticket to being super productive, I think! :D Have a great weekend!

Those squash fries look super yummy! We have two zucchinis sitting in our fridge needing to be eaten… maybe I’ll try something similar with ingredients I have lying around.

Our gym’s BP73 launch is next week. Our instructor warned us that the squat track is really hard… and that’s already one of my most difficult tracks!

Your office looks great. Those squash fries look good too. Question about the whole flax seeds – I thought you had to grind them to get any nutritional value out of them. Can you use them whole??

Reply

Tina April 9, 2010 at 4:50 pm

@Lori: You can use them whole, but for your body to process them, they need to be ground.
