I feel like I have been all over town today! Well, I guess I sort of have… I ran errands in Quincy and Braintree, drove to Waltham, and then walked all over Watertown before heading home. Phew! I’m just tired writing that! 😉
[rewind to this morning]
Snack
Mid-morning, I suddenly got the urge to do some baking. A few weeks ago, I received some coconut flour, so I decided to do a little experimenting with it. I ended up creating an ugly, yet yummy Coconut Carrot Cake Muffin.
Coconut Carrot Cake Muffins
Makes 6
Ingredients:
- 1/2 cup coconut flour
- 1/2 cup shredded carrots
- 1/4 cup raisins
- 1/4 cup chopped walnuts
- 1/4 cup ground flaxseed meal
- 1/4 cup sugar
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- 1 tsp baking powder
- 2 eggs
- 1/4 cup canola oil
- 1/4 cup low-fat milk
Directions:
- Preheat oven to 350*F
- Combine all ingredients in a large mixing bowl
- Spray muffin cups with non-stick cooking spray
- Pour batter into cups and bake for 20 minutes
- Allow to cool before enjoying
Of course, I had to test one of the muffins as soon as they came out of the oven. 😉 They were a little crumbly, but the flavor was delish– sweet, yet not too sweet with a wonderful coconut flavor. I also liked the raisins and shredded coconut throughout. Yummy muffins– just not too pretty!
After my baking experiment, I drove to Gordon’s Wine and Liquors to pick up some postcards for the VinoVoyage. I’m helping Gordon’s spread the word about the event by distributing these postcards around town.
I spent about an hour walking around Watertown Square popping into restaurants, shops, cafes, and salons. It actually didn’t seem like work at all, especially with the beautiful weather. It was actually a nice, little workout! 😀
Lunch
When I got home, I threw together a quickie lunch. I made Real Simple’s Carrot and Apple Slaw With Raisins, which I placed on top of a bed of romaine lettuce.
Not surprisingly, I made a few changes to the recipe: I used a Gala apple instead of Granny Smith, used regular raisins instead of golden, and nixed the cilantro (because I didn’t have any in the house).
Light, fresh, delicious.
With lunch, I also had a Siggi’s yogurt and an iced tea latte made with Golden Moon Sugar Carmel Oolong and vanilla soy milk.
And, I enjoyed another muffin for dessert. Not pretty, but tasty. 😉
Book Update
I spoke with my editor today and he really liked my first draft! YAY! He said that I’m in a good place, but I need to add MORE personal information to my book. I felt like I put a lot of personal stuff into my first draft, but there needs to be even more. If you buy my book, you are really going to know EVERYTHING about me! I still have some writing to do, but it looks like the tough part is over. Hooray!
Lose the Dough Goals
As part of my Lose the Dough goals for this month, I committed to planning my workouts for the week. It’s only Monday, but I’ve kept to my schedule for both yesterday and today. I also feel really good about the rest of the week. I guess I just needed a little kick in the butt?
