A New Go-To Recipe

April 25, 2010

My gosh has today flown by! 8-O Seriously, where do the weekends go?!?

Sometimes just one more day would make the weekend feel like a true weekend, right? Sadly, I know this isn’t possible, so I’ve found ways to better deal with the Sunday Blues. Recently, Mal and I have scheduled movie nights for Sunday evenings. Having something like this to look forward to helps us ease back into the work week instead of stressing out about Monday morning. Tonight, we’re watching The Invention of Lying. I hope it’s good!

Workout

Guys, I love running. I really do. I wish I could do more of it. There’s just something about running that is so relaxing. Plus, I always feel like a million bucks when I finish a run.

This afternoon, I ran 3 miles in 25:42 (8:38 pace) and then walked for an additional 1/2 mile to cool down. It was a nice little workout– short, sweet, and without pain. It felt great to get out there and RUN.

Lunch/Snack

After my run, I wasn’t really hungry for lunch. Breakfast did a better job holding me over than expected, so I ended up snacking on a Gala apple.

And then some Coconut Curry crackers (I’m obsessed!) and a few prunes (not pictured).

Before dinner, Mal saw a commercial on TV for a special Dairy Queen promotion: Buy 1, Get One for 25 cents. Today was the last day of the promotion, so, of course, we NEEDED to go. Mal really had to twist my arm to get me to go with him. ;-)

IMG_0001.JPG

Unfortunately, our local DQ doesn’t participate in promotions. Boo! :-( Mal and I were bummed, but we decided to get Blizzards anyway. I mean, we went through ALL of that trouble to drive there and wait in line! ;-)

Dinner

I tried a fantastic new recipe for dinner tonight. Mal already declared it a “Go-To” recipe for our house.

The other day, I stumbled upon a delicious-sounding recipe in Runner’s World for Rocco DiSpirito’s Fettuccine Alfredo. I love Fettuccine Alfredo and I love Rocco, so I had a feeling that this recipe would be a winner!

IMG_0004.JPG

As always, I made a few changes to the recipe: I used rigatoni instead of fettucini and nixed the cornstarch. (We didn’t have either in the house.) Even though I altered the recipe, the meal still turned out really well– pretty much just like the “real deal,” but much healthier for you.

IMG_0005.JPG

On the side, I had a big salad topped with balsamic vinegar.

IMG_0007.JPG

IMG_0008.JPG

For dessert, I’m planning to eat half of my Oreo Blizzard and save the other half for another time. Portion control, baby!

IMG_0010.JPG

It’s movie time!

Good night, guys!

Great job on the portion control – it’s always hard for me to do.

I don’t think I’ve EVER had a Blizzard, which is crazy considering how many McFlurrys I had growing up haha. Enjoy your relaxing night with the hub.

I hate when stores don’t participate in the promotion…it’s so cheap! We have a lot of Subways near us that don’t do promotions, it makes me not want to go back. lol.
Have a fun movie night!

I can’t believe your DQ doesn’t participate! What a bummer! We totally took advantage of that deal last Monday and I had a blizzard for dinner. Obvi! You just gotta live sometimes!

Cara April 25, 2010 at 7:31 pm

Haha, that’s brutal! How can they just “not participate” in promotions like that? I’m pretty sure that commercial was a total scam just to get you out there… :)

You’re killing me! Oreo blizzards are my favorite : )
I also wanted to let you know that I made your Chocolate Chip Banana Bread Cookies today, but substituted coconut for butterscotch chips and walnuts and they were amazing!
Hope you had a great Sunday!

So does the blizzard! Wow, I haven’t had one in sooooo long… :(

I LOVEEE running too. I’m really bummed that my back has been hurting lately while running though. Do you ever have issues with this being top heavy like I am?

Anna @ Newlywed, Newly Veg April 25, 2010 at 7:54 pm

That movie looked good! Hope you like it.

I definitely would not be able to save half of my blizzard, lol. Ahh, lack of willpower :-)

I just heard the DQ promotion on tv, bummer, but they are still pretty cheap and so tasty! Why do Sunday’s fly by? I like to cherish them and before I know it they are gone.

Ooohhh Blizzards…had I known I may be eating one for dessert tonight, too! Instead I modified one of your dessert recipes…just as yummy! It’s amazing how time flies when we’re having fun…enjoy movie night! I’ve heard good things about that flick :)

I can’t believe you couldn’t get the promotion….what a bummer!

Awww yay for portion control! I remember as a kid, er, teenager, I had no idea I could save half of them blizzards for later. I recall not being a big fan of ‘em ’cause they’d fill me up till I was sick to me tummy :( If only I knew!!

Your 5K time is so inspring! I hope to reach a similar pace some day, running is such a delight!

Julie April 25, 2010 at 8:00 pm

Is that the one on Washington street? It’s “independently owned” so they aren’t a “real” DQ. Next time try the Weymouth one…or better yet, go to Abington and you won’t even have to get out of the car! They have a drive through!

I had high hopes for The Invention of Lying but my husband and I thought it was HORRIBLE! Just because people can’t tell lies doesn’t mean they have to say every single thing they are thinking – to the point of being really mean! I’m interested in what your opinion is…

Fabulous looking dinner! I’m trying that one for sure!!! Good job on the portion control….that is Hard!!

Did you enjoy the movie? I watched it already about two weeks ago, and I didn’t really like it… =/ I thought it was a little… awkward at times. It’s funny though… ish. Meh, I just didn’t really think much of it.

That dinner looks deeeeeelicious! :D Cheers to a good week ahead! :D

I LOVE fettuccine alfredo, but honestly can’t remember the last time I had it. I will most definitely be making this healthier version. Yum!

That is SO dumb that it doesn’t participate in promotions! I know they are all probably owned by different people but c’mon!
Anyway, good idea to have half now and half later :)

Reply

Alyssa April 25, 2010 at 8:27 pm

What a lame Dairy Queen! Granted it looks like it’s owned locally, but still :) Good choice to keep the blizzard spirit alive :)

Reply

Jenna April 25, 2010 at 8:29 pm

My boyfriend and I had the same idea Mal and you did today! I opted for Snickers. :) I ate half last night, too. The other half I nibbled on throughout the day today. Enjoy your movie!

Personally, I wasn’t overly fond of “Invention”; it was weird how much everyone focused on Ricky G.’s looks.
Also, I’m dying for a Blizzard, now. They’re so tasty, I don’t know where you get the willpower to save it!

Boo on that DQ for not participating in the promotion! Dinner looks yum….it’s been soooo long since I’ve had alfredo. Enjoy your movie night!

That’s such a bust they don’t do promotions. I wonder if the one near me does or MA ones all cop-out

Jessica April 25, 2010 at 9:07 pm

Oh man! I made that Rocco recipe last week–and tailored it just for one (I was solo that night). It was DELICIOUS! In fact, I actually kept the cornstarch in mine because I accidentally bought Fage 0%, not 5% like the recipe called for.. and it was still creamy and awesome. So… for an even healthier trick use the cornstarch (or sub flour) and use the 0%. Did you see this month’s Asparagus Naan Pizza??? Can’t wait to try that one!

I hope you liked the movie! I watched it on the plane to Australia and loved it – but I’m a huge fan of Jennifer Garner and RIcky Gervais :)

I haven’t seen the movie, but I’ve loved every other Ricky Gervais movie. I have been wanting to try that fettuccine alfredo recipe for awhile now..might need to try this week. It looks good :)

We don’t have many DQ’s where I live. How did the blizzard not melt when you guys went from DQ to your house? I don’t know, probably a stupid question.
