Murphy is waiting patiently for me to take him out for his long walk of the day, so I’m going to whiz right through this post. It’s 65* and sunny, and I haven’t been outside yet today, so I am also in need of some fresh air and sunshine!
Lunch
After working hard all morning, I finally broke for lunch around noon. I threw together a big salad with lots of veggies and some dry roasted edamame. My appetite is finally back and I am craving nutrients!

In the mix:
- Romaine
- Carrots
- Cucumber
- Broccoli
- Red onion
- Balsamic vinegar
- Dry roasted edamame

After lunch, I craved something sweet, so I dug into one of my carrot cake cupcakes that I baked yesterday. Mmm!

Snack
After lunch, I went back to work for a couple more hours before taking a break to eat a snack and watch some Real Housewives of New York City. (They’re my favorite!
) As a snack, I made a package of instant oatmeal with liquid egg whites, dried fruit, nuts, and chia seeds. It hit the spot.

I love roasted edamame! What a great salad
love it! Have a good walk
Yay for the weather – it seems like everyone is getting some sun, both sides of the pond
I have never had dry roasted edamame. But it sounds really good. I think I’d love it in a salad.
Glad you are feeling better–now I am getting hit with the bug and my appetite is blah. I could go for a cupcake though
That salad looks so good! Where did you find the dry roasted edamame??
yay for nice weather! i’m sure murphy is lovin’ his walk at this very moment.
I prefer real housewives of oc or of atlanta. the ny ladies seem to smart which makes them less entertaining.
Great looking salad and hooray for nice weather!
You and Mal are such good doggie parents. My family’s dog is lucky to get one walk a week… whoops!
I heard that they are going to do a Real Housewives Boston!!! Very exciting!
In the 7 years I lived in Boston I don’t ever remember it being 65 in March. Jealous!
Dry roasted edamame? Sounds good! Thanks for the cool idea. I’ll have to search for them.
Murphy, btw, is absolutely adorable. I am in love with pugs and I’m fostering 3 pugs from the animal shelter for two weeks right now. They bring me so much happiness, as I’m sure Murphy does to you
Thanks for the salad idea…i have been in a salad rut lately.
I checked out coconut flour and I intrigued and i think this would be perfect in my pineapple muffins that I make. Do you sell that on your site?
it’s so nice out today in boston! enjoy the sunshine
That salad looks gorgeous!
That is a good looking cupcake.
I’m always so impressed with how well round and well presented your meals are!
What a “beautiful” looking salad, worthy of a magazine cover! =)
Have you read any of Bethenny Frankel’s “skinny girl” stuff? What do you think of it?
I just took my dogs out for a long walk in the sun…they are so happy that spring is here!
@Sarah: If you Google “review of Naturally Thin,” my post will pop up!
@Amy Ramos: Not yet, but I am trying to get it into my shop.
Love all the colors and vibrancy of lunch. You’re making me crave a salad.
Did you dry roast your edamame or buy it that way? Sounds wonderful.
Tina,
Yay, You are feeling better! You need to go outside and enjoy some sunlight because I once heard it helps with getting over a cold/flu. (Maybe the extra Vitamin D)…
I <3 HNYC and look forward to watching it tonight with my normal iced latte in hand.. I have a feeling this season is going to be explosive!!
Happy Blogging,
Ashley
You titled this post “The Pug is Waiting” and yet no adorable photos of the Murphy dog. I was disappointed….
your salad is so colorful, I love it! Do you agree that great weather inspire healthier and more fresh eating?!
yum! sounds like you got some nutrients alright…what a gorgeous salad! but i think the real stuff is coming from that cupcake
Why do you add egg white to your oatmeal? Is that the package directions or do you add it for more nutrients?
The NYC housewives are my favorite too! They seriously crack me up, especially Bethany. Although, is it just me or did she get a little annoying this season?? hehe
That salad looks great! I love salads!
I love when the appetite finally returns. Now I’m devouring fruits and veggies again.
