I’m so tired today. Wahhhh! I could have easily laid down and taken a nap this afternoon. 😕 I have no reason to be tired though. I’ve been getting 7-8 hours of sleep every night and sleeping pretty well (minus the annoying night sweats). I assume it’s the dreary weather that’s making me feel tired? It’s so interesting how weather can affect one’s mood. Hurry up and get here, sunshine!
Snack
About an hour after I got home from work, I snacked on a homemade granola bar. I ended up smearing a little “hippy butter” on top of it. 😉 Perfect!
Dinner
For dinner, I tried a new recipe from a cookbook that I was sent to review the other day. Flipping through, I stumbled upon a recipe for “Mac and Cheese with Shredded Chicken and Cauliflower.” Real Simple has a similar recipe that I absolutely love, so I gave the Skinny Chef’s version a try tonight.
The recipe called for roasted cauliflower, so, as directed, I wrapped the florets in tinfoil and cooked them in the oven.
I love this method of roasting veggies! I’ll definitely use it again in the future. It was so easy.
The recipe turned into a tasty, comforting, and satisfying dish. Pasta + melted cheese is always a winner in my book! 😉
But, I have to admit, I like the Real Simple version better. Maybe because it’s baked? Or because it calls for extra sharp cheddar instead of mozzarella? I like strong, stinky cheeses, so mozzarella just doesn’t do it for me. It’s too bland.
All in all, I liked this recipe, but I’ll probably stick to the Real Simple version in the future.
For dessert, I had a handful of Panda Cherry Licorice that the company sent me to sample. Surprisingly, it tasted a million times better than I expected! I’m not a huge fan of licorice, but the cherry flavor was really good– soft, sweet, and sort of juicy. I might just help myself to another handful. 😉
