Cupcake Heaven

Good morning, bloggies! :mrgreen:

I slept so late this morning! It was awesome and totally worth it. I feel so much better this morning. I almost feel like my normal self again. I just need to get rid of my stuffy nose!

Breakfast

Mal finished off the peanut butter the other day and almost threw out the jar. The horror! 8-O Luckily, I saved it in just the nick of time, and used it for OIAJ this morning.

I made blueberry oatmeal this morning.

In the mix:

  • 1/3 cup old-fashioned oats
  • 1/4 cup Galaxy Granola
  • 1/2 tbsp chia seeds
  • 1/2 cup frozen blueberries
  • 1 tbsp ground flaxseed meal

I also had some iced coffee with hazelnut milk with breakfast.

So, even though I was feeling under the weather yesterday, I wasn’t too sick to bake cupcakes! ;-) I’m not going to lie, eating homemade carrot cake cupcakes for lunch definitely made me feel better! I was in cupcake heaven!

I would eat creme brulee every night after dinner. I think if I knew I could have a little dish every night I would pig out so much because I wouldn’t want to be too full to enjoy it.

Hi Tina! The cupcakes look delicious :) I’ve been reading your blog for about a year now (and even made it through all your archives!) and I just wanted to let you know how much I love it. Though I check out other blogs occasionally, yours is the only one I read daily, in large part because you always take the time to make your entries detailed, witty, and optimistic. Since I’m in college (I go to Duke) I don’t usually have a kitchen to work with, but when I’m home your recipes provide great inspiration for cooking.

So funny – I have those plates with different graphics! They have the same shape and wording, but the cupcake graphics are slightly different. A friend bought them for me probably 5 years ago.

Peppermint patties! I love brownies and chocolate chip cookies the most, but almost never eat them because it’d get outta control ;)

That is so tough because I’m such a fan of cupcakes and brownies. I think I would pick cupcakes though because you could make all different flavors and never get tired of them! :)

I noticed your blueberry oatmeal was purple, that is my FAVORITE part about making oatmeal w/ blueberries :) (it’s the little things)

Oh my days, that’s such a tough question!
I LOVE ice cream…but I like a decent tiramisu, or a reeeeally good cheesecake….it’s too haarrrdd! Porbs ice cream :)

I can’t IMAGINE only having one dessert for the rest of my life (oh, the horror!), but if I HAD to choose, it’d be chocolate. Straight up, plain old 70% dark chocolate. YUM!

Beautiful cupcakes. Your dinning table looks like a high end cupcake shop in those photos! I would eat ice cream for the rest of my life. It is one of the little things I look forward to at the end of my day.

On the assumption that plain dark chocolate doesn’t count as “dessert” but as “essential part of daily diet”, then I would say gluten-free black bottom cupcakes. YUM.

Btw, in regards to the question above about why you’re eating cupcakes etc, are you trying to lose weight? Because honestly you look tiny to me.

Just catching up on a whole week of posts and sorry to see you have not been well. The correct quote is “feed a cold and you will starve a fever” so best to crank up the fluids and just eat soups, fruit etc when you have a cold.
Favourite dessert is White chock chip, Macadamia and Rasberry Muffins….amazing combo !
