Carrot Cake Creation

I’m in such a great mood today!!! It must be because of my blog birthday! The whole day feels like a mini celebration to me! :mrgreen:

Workout

After breakfast, it was time to break a sweat. I did the Physique 57 workout in my living room while in bare feet and still wearing my PJs. ;-) Even still, it was just as tough as a workout as I remembered. My buns, thighs, and abs were screaming for mercy! I love workouts like that!

A little while later, I re-hydrated with a bottle of Orange Cranberry Tangerine Skinny Water that I company set me to test out. I’m not typically a huge fan of flavored water, but I liked this one. The flavor was sweet, but it didn’t taste super artificial like some of the other flavored waters out there.

Lunch

I packed lunch in 5 minutes today. I don’t know where the morning went! I threw together a quickie salad with spinach, cucumbers, carrots, tomatoes, and mushrooms, and topped it with a huge scoop of “lentil surprise.” On the side, I had a Jazz apple and a SoyJoy bar.

Lunch didn’t really fill me up today, so I was ready for a big snack when I got home from work.

Snack

Ooh, boy. I created something delicious in the kitchen this afternoon! :-D

Being National Carrot Cake Day and all, I wanted to create a healthier version of it, so I did a little experimenting. The end result was a carrot cake oatmeal-soufflé creation. Holy yum! :-D

In the mix:

  • 1 packet Quaker cinnamon spice instant oatmeal
  • 3 oz pineapple Chobani (half of the container)
  • 1/3 cup liquid egg whites
  • 1 tbsp chopped walnuts
  • Shredded carrots
  • Cinnamon to taste

To make this yummy carrot cake treat, I mixed up all of the ingredients in a microwave-safe bowl and nuked it for 90 seconds. The middle was a little mushy, but I like it that way. ;-) If you want a more firm texture, increase the cook time to 2 minutes in the microwave.

I LOVED this snack! I have half of a pineapple Chobani in the fridge, so you’ll probably see this for breakfast tomorrow morning.

I think one of the best parts of carrot cake is the cream cheese frosting- which has kept me from wanting to make a “healthier” version. Pineapple chobani is tempting as a potential sub for that!

I love your lentil surprise. My husband thinks it’s so weird that I love those little beans so much- I think they have a bad stigma bc many people didn’t like them as children.

Happy Birthday to you!! Love your blog!! Hey – I have tried the 3 minute oatmeal cookie – and not loving it – doing something wrong! What oats do you use? Quick cooking or regular? Also, does it have to be liquid egg white or can it just be egg white?? Want to love them —!!

I was thinking about doing a baked carrot oatmeal today…then I ran out of time to even think about it since my kids were on half day from school today. I bet the pineapple yogurt really made it good! YUM!

That’s an amazing idea!! I didn’t know it was fine to microwave yoghurt like that. And I’m sure it would work with other flavours too… now Choban just needs to come out with a chocolate yoghurt :P

I just read your 3 ways to change the way you think about exercise. I definitely agree! I look forward to the gym (yes look forward to) specifically because of the TV and the free magazines! My gym here on campus has magazines just sitting there for anyone to read! Also, I’ll brave the cold and walk to the gym if I can watch Say Yes to the Dress!
