Lentil Surprise

Yesterday, I found a big bag of Sprouted Green Lentils in the way back of our cabinet as part of the great “Eat What’s In Your Kitchen” project. I can’t believe how much random food we have forgotten about! It makes me feel so wasteful! I’m glad that we’re finally making a dent in it.

The folks at truRoots sent me this bag of lentils AGES ago. I don’t eat lentils often, so I was excited to try a “new” food for dinner tonight.

Again, I just threw a bunch of ingredients in a pot with the lentils while they cooked. The end result was a “lentil surprise.” ;-)

In the mix:

  • Green lentils
  • Broccoli
  • Mushrooms
  • Spinach
  • Red onions
  • Cabernet vinegar
  • Dijon mustard
  • Minced garlic
  • S + P

Then, I created a bed of lettuce with some chopped romaine and topped it with a heaping serving of my “lentil surprise.” The meal turned out really well– and it was SO filling. Lentils really pack a punch, huh?

For dessert, I enjoyed a small portion of Malted Milk Ball Gelato. Heaven.

The good news will have to wait until tomorrow– still working out the details! :-?

I just made lentils for the first time last week – a successful lentil soup! What is the difference between green lentils and sprouted green lentils? Is there a difference in the nutritional quality?
This combo sounds great. I might give it (or something similar) a try.

I don’t think I have ever ha sprouted lentils, I will have to keep my eyes peeled for them! I love putting lentils into stews and chilis!

I loooove lentils, particularly in an Indian dahl with a squillion spices. I like the use of cabernet vinegar here, though! But might I show my ignorance and ask what it means that these are “sprouted”? How are they different from normal lentils?

I didn’t even know lentils came sprouted. But they have to be one of my favorite vegan proteins!
That gelato–you’re making me want it sooo bad. If only it weren’t at home 60 miles away

I LOVE lentils, but I have to say that this is the first time I’ve heard of sprouted lentils! I’m curious to hear how they differ from regular lentils?

I am hoping you are working out the details of somebody renting your apartment! :)

We started the ‘eat up the cupboards’ task about two weeks ago when we cleaned out the cupboards. It is so amazing what you forget about when things get thrown in front of each other.

Lentils are one of my favorites. Now that I think about it, I think I learned about them on a cruise when they served lentil soup.

Just found out Ciao Bello is moving a production company to Oregon… will have to go on a tour of their factory, I guess!! My favorite flavors are Blackberry Cabernet sorbet and the Key Lime Pie one. It has chunks of graham cracker!! The Green Tea and White Chocolate chunk one is delish as well.

I’ve been wanting to try lentils for awhile now! your lentil “surprise” looks like it turned out really well though. and i hope your good news is home/apartment related; it sounds like you’ve been showing and looking at so many places

I, too, have so many things in cabinets, drawers and the freezer that I buy and forget about. It’s an awful habit, but I’m trying to be less wasteful — 2 New Year’s resolutions in a row. lol

I love lentils, I really need to eat them more often.

Yep, lentils are VERY filling, but they are so tasty. I’ve been experimenting lately with different kinds (red, french, etc.) and most of the time, it comes out delicious.

Lentils are so great. Not only are they filling, but they’re so much quicker to prepare than dried beans. I like to make some and mix it with a little BBQ sauce and then serve over a baked sweet potato!

Well you know I’m obsessed with this post :) I just made some of Deena Burton’s lentil soup last night! Delicious with apple cider vinegar drizzled on top.
