Baked Banana Oatmeal

Yummy breakfast this morning! :mrgreen:

Doesn’t this piece of Baked Banana Oatmeal look delicious?!

Baked Banana Oatmeal

Makes 2 servings

Ingredients

  • 1 cup old-fashioned oats
  • 2 tbsp brown sugar
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp chia seeds (optional)
  • 1/2 cup chopped walnuts
  • 1 cup almond milk
  • 1 tsp vanilla extract
  • 1 banana

Directions

  • Preheat oven to 350*F.
  • Combine all ingredients (except for the banana) in a mixing bowl.
  • Coat a loaf pan with non-stick cooking spray
  • Pour oatmeal batter into pan and spread evenly with a spatula.
  • Slice banana and place on top of oatmeal batter.
  • Bake for 30 minutes or until top is lightly browned.
  • Allow to cool before cutting.

Eating Baked Banana Oatmeal for breakfast this morning was such a treat– it was hearty, sweet, and comforting. And, the recipe was so easy to make. I could probably even make it during the work week, if I prepared the ingredients the night before. I’d just have to pop the mixture into the oven the next morning. I’ll have to keep this idea in mind! ;-)

I also enjoyed a glass of iced coffee with breakfast.

I’ve already made some serious progress on my To Do list for today. Hopefully, I can keep up the momentum!

Trying this today! My 2 current obsessions at the moment are my smoothies and then oatmeal breakfast! But I love baked oatmeal any way so this will be an awesome addition. :)

I’ve never heard of baked oatmeal bread, but this convinces me I have to try. The banana slices are so pretty on it. I have the same problem: My weekend meals are much better than those I eat during the week because I have so much more time. To make up for the weekday morning crunch, I try to prep as much the night before as I can so breakfast is fast as possible.

Yum! My mom used to make us a nice thick pan of baked oatmeal sometimes…or she’d put it in muffin cups- easy to freeze and then pop in the microwave! I’ll have to try your recipe :-)

That looks really good. Curious about the texture/consistency: Is it like oatmeal only a bit stiffer? Chewy? Heavy or light? Never made it before!

the baked oatmeal looks fantastic!! how about baking most of the the night before and then reheating in the morning to save time?

i keep meaning to post a question (but maybe i missed this before…) – what kind of a straw do you use in your iced coffee? it almost looks like stainless steel. i love straws, so this one caught my eye!
