Mmm! Mmm! AWESOME afternoon snack today!
I basically made a “healthier” oatmeal raisin cookie in the microwave– and it took me just 3 minutes.

Here’s what to do:
Combine the follow ingredients in a microwave-safe bowl:
- 1/4 cup oats
- 1/8 cup liquid egg whites
- 2 tsp brown sugar
- 2 tsp all-purpose flour
- 1/4 tsp vanilla extract
- 1/4 tsp baking powder
- 1 tbsp raisins
- Cinnamon to taste

- Scrape batter off the sides of the bowl and flatten into a cookie shape.
- Cook in microwave for 45 seconds.
- Allow to cool and enjoy!

YUM!!! This recipe is definitely a keeper! It’s almost as delicious as the “real deal,” but much more nutritious. And, most importantly, it satisfies my cookie cravings!

That looks awesome! I can’t wait to try it! I’m sure you could adapt it too to make chocolate chip, butterscotch, apple, or whatever! The possibilities are endless! I posted the recipe on my blog with credit to you, of course:)
I’ll have to keep this recipe in my arsenal of quick treats! Looks super good
Freya-you can get carton egg whites in the UK. Go
on the Two Chicks website for store listings. Or you can order online from other companies- google will bring them up.
Tina, this is the PERFECT cookie for everyday. No guilt, loads of flavor and packed with nutrition. So well balanced….thanks for sharing!
Anna @ Newlywed, Newly Veg you can also use a banana instead of egg whites. It gives it a chewy and flavorful texture.
What a fantastic creation! I’m eating one right now and boy is it yummy!! Thanks for always bringing something new to the table with good-for-you treats.
Hi Tina (and anyone else who is interested!),
I just wanted to respond to this because two chicks liquid egg white (www.twochicks.co.uk) is mine and my friend’s company. Firstly, thanks so much for buying our product! We have worked really hard so it is great to know people enjoy it (if you have any good recipes such as this one please send them to contactus@twochicks.co.uk and I will put them up on our website).
Thanks again!
Anna
Any idea how many calories this cookie would be without the raisins? Not a raisin fan at all
I did a quick recipe for myself on Calorie Count — I swapped the flour for whole wheat and the breakdown came out like this: 150 cal, 1.5 g fat, 27.5 g carbs, 2.7 g fibre, 7 g protein. I swapped Chocolate Chips for raisins and it came out about the same 148 cal’s, 2.5 g fat, 24.3 g carbs, 2.7 g fibre, 7.1 g protein

Can’t wait to try this! I might add cranberries instead of raisins. For some reason I keep them in my pantry a lot more often… <3 the idea!
yum – looks great!!
Sounds great, I will definitely try it on those cookie craving days.
Sound delicious!
This is a perfect idea for a small need to satisfy something hot and gooey, but not out of the ballpark for calories
GREAT IDEA!!
This sounds terrific. Will have to buy liquid eggwhites, but so what!
Funny – I just entered the recipe into SparkPeople’s recipe calculator, using Egg Beaters and whole wheat flour, and I ended up with 187 calories. Hmmmm…..
this sounds great, cann’t wait to try it.
Awesome. I love oatmeal raisin cookies but don’t bake them because there will be too many laying around. I am definately going to try this. Thanks for sharing
I will be trying this. Have done the cake in the mug. Those were great. Cookies are even better.

OMG–this is SO good!! Curiously satisfying, though just a few more calories than in my doctored morning oatmeal…really good chew LOL. Thanks, Tina!
Tried this for breakfast this morning. It was great. Added a few walnuts. So good. Thanks
WOW – looks yummy. I’m going to print this out and try making it this afternoon. Thanks for sharing!
Yum! Looks great…definitely going to have to try it!
I LOVE this recipe! I seriously make it almost everyday as a snack between meals. I sub the flour with my hemp protein powder, and make a mix of raisins and craisins, and sometimes add nuts. Tastes great topped with peanut butter!!
These sound great I am going to try them. Very creative idea!
Loved the idea.
Will definitely try it out.
Since oatmeal cookies are my favorite, I have to try this!
I made this just now and it is really good! Next time I’ll definitely add some chocolate
Calorie count according to Sparkpeople (no modifications): 182
Great! A bit high in carbs, but using splenda instead of sugar helps a lot. I use brown sugar baking blend.
I really liked this cookie substitute thingy. I used a whole egg and added a little applesauce to make it a quarter cup, then made two and gave one to my brother. I will definately be making this again.
Does this work with quick-cooking oats? And how much of an egg is about 1/8 cup?
I made a version of this but with honey instead of brown sugar and dried cranberries instead of raisins. Very filling and tasty. I wish I had the raisins and brown sugar. This recipe is a keeper!
