The 3-Minute Oatmeal Raisin Cookie

Mmm! Mmm! AWESOME afternoon snack today! :mrgreen:

I basically made a “healthier” oatmeal raisin cookie in the microwave– and it took me just 3 minutes.

Here’s what to do:

Combine the follow ingredients in a microwave-safe bowl:

  • 1/4 cup oats
  • 1/8 cup liquid egg whites
  • 2 tsp brown sugar
  • 2 tsp all-purpose flour
  • 1/4 tsp vanilla extract
  • 1/4 tsp baking powder
  • 1 tbsp raisins
  • Cinnamon to taste

  • Scrape batter off the sides of the bowl and flatten into a cookie shape.
  • Cook in microwave for 45 seconds.
  • Allow to cool and enjoy!

YUM!!! This recipe is definitely a keeper! It’s almost as delicious as the “real deal,” but much more nutritious. And, most importantly, it satisfies my cookie cravings! ;-)

Nutritional Information (1 cookie):

140 kcal

7 g protein

1.5 g fat

40 g carb

17 g sugar

4 g fiber

on the Two Chicks website for store listings. Or you can order online from other companies- google will bring them up. :)

Anna @ Newlywed, Newly Veg you can also use a banana instead of egg whites. It gives it a chewy and flavorful texture.

I did a quick recipe for myself on Calorie Count — I swapped the flour for whole wheat and the breakdown came out like this: 150 cal, 1.5 g fat, 27.5 g carbs, 2.7 g fibre, 7 g protein. I swapped Chocolate Chips for raisins and it came out about the same 148 cal’s, 2.5 g fat, 24.3 g carbs, 2.7 g fibre, 7.1 g protein

Funny – I just entered the recipe into SparkPeople’s recipe calculator, using Egg Beaters and whole wheat flour, and I ended up with 187 calories. Hmmmm…..

I LOVE this recipe! I seriously make it almost everyday as a snack between meals. I sub the flour with my hemp protein powder, and make a mix of raisins and craisins, and sometimes add nuts. Tastes great topped with peanut butter!! :D

Great! A bit high in carbs, but using splenda instead of sugar helps a lot. I use brown sugar baking blend.

I really liked this cookie substitute thingy. I used a whole egg and added a little applesauce to make it a quarter cup, then made two and gave one to my brother. I will definately be making this again.

I made a version of this but with honey instead of brown sugar and dried cranberries instead of raisins. Very filling and tasty. I wish I had the raisins and brown sugar. This recipe is a keeper!
