So, I didn’t make it to Body Pump tonight. I blame the snow.
I ended up staying later than usual at work, so by the time I got on the road, the snow was really coming down. I felt like I was driving in a blizzard!
The traffic on the highway crawled along, so my normally 30-minute commute was more than 50 minutes.
By the time I got home, there was no way I could take Murphy for a walk, catch the bus downtown, and make it to Body Pump on time. I considered driving, but parking in Back Bay is always such a nightmare. Blah, blah, blah. I hate all of the excuses. In the end, I skipped Body Pump. Buutt, I came up with a fantastic Plan B, which involves a really fun strength training workout on Saturday morning. Hopefully, it’ll make up for tonight!

Pretty much as soon as I made up my mind to not attend Body Pump, the skies cleared up and the sun came out. WTF?!?
I guess Mark Twain was right: “If you don’t like the weather in New England, just wait a few minutes.”

With such a nice day on our hands, Mal and I took Murphy for a long walk. We walked for well over an hour, so at least at got some exercise today.

We walked ALL over South Boston this afternoon.

We played in the park.

And, then stopped at the grocery store to purchased a baguette for dinner tonight. (What’s up with me and baguettes this week?!)

And, finally, we found some sweet sticks to chew on.

Dinner
Remember the Beans on Toast meal that I loved– and then attempted to make at home a few weeks ago? Well, I bombed my first attempt, but my second was right on!
Here’s how I made the cheesy bean sauce:
- Combine 4-5 ounces of Velveeta with 1/4 cup chicken broth and 2 teaspoons of Worcestershire in a small sauce pan and cook on medium heat
- Stir until Velveeta is fully melted
- Pour sauce over cannellini beans (or other favorite white bean)
Also with dinner, I ate a big salad and a number of pieces of French bread dipped right into the cheese sauce– many of which went undocumented.

Raw broccoli dipped into the cheese sauce is also a yummy combo!

I’m enjoying a single piece of dark chocolate for dessert right now, then putting on my PJs, and vegging out with my boys in front of the TV.

P.S. Before going for a walk with my guys, I snacked on a 3-Minute Spirulina Cookie with peanut butter, which tasted fine, but looked disgusting. I didn’t post the photo for just that reason, but if you’re curious, you can see the unappetizing cookie here. Don’t say I didn’t warn ya!

PS love the pug face! I try to get my chihuahua to play with sticks (well twigs because she is so small) but she gives me this “I am way too mature to play with sticks, Mom” look and I give up.
Tina, I just wanted to give you props for eating such balanced meals lately. It looks like you are doing well with your “loose the dough” goals. You’ve inspired me to try the same. Although I’m at a healthy weight and prepare healthy foods for breakfast/lunch, I tend to “pig out” and snack on easy foods (bread, chocolate, nuts, granola bars) all evening instead of fixing myself a real dinner and I feel like I’m missing out on my nutrients.
Every time I read about your 3 minute cookies I tell myself to go make one. TONIGHT is the night!

The weather was SO ridiculous today. It was a complete white-out and then sunny 10 minutes later!
It was 60 and sunny here today. Don’t be too jealous because it’s gonna snow on Saturday! What the heck is up with this crazy weather? I can eat a whole baguette loaf all by mah self

The snow was so odd here today – I had no idea it was even snowing until I left my office. The parking lot was a skating rink but the roads weren’t too bad.
Your cheese sauce looks amazing – I bet that would be a great warm dip or over some steamed broccoli.

Some people consider velveeta to be a comfort food, but there’s something about velveeta that I find discomforting. What IS it exactly? It’s not really cheese. There’s quite an air of mystery surrounding that “food”.

We have the exact same weather problem in Michigan. Sometiems I get so stressed out when something comes up and I can’t get my workout in, but it sounds like you made a really good choice by going for a walk and planning on doing the strength Saturday instead. Good for you!

Ooh – since you have both of these things, you have to try a piece of dark chocolate sandwiched between some baguette slices like a little chocolate sandwich. So good! I’m reading A Homemade Life by Molly Wizenberg (Orangette) and she recommends it as a snack. So good!

What funny weather! Well at least you had a fun walk with the dog and hubby…bet it was more fun too!
Funny! I *love* cheese and pretty much always have at least 5 or 6 kinds in my fridge- from brie to string- haha- and for a few years, gouda has been one of my favorites. I shared some with a friend a little while ago, and after he tasted it, he looked at me and was all “this tastes like glorified Velveeta!”, and I stopped for a second and was all “ohhhhhhh…that must be why I like it so much!” I haven’t had Velveeta since I was a kid and don’t think I could eat it again, but it was definitely one of my favorites growing up!
Oh, and did Mark Twain really say that thing about the weather there? I swear people say that all over the place- I grew up in Michigan and everyone used to say it, and I’ve heard people from other states say the same thing. Unfortunately, that saying is not applicable here in Seattle, which is why I’m moving this year!
Oh looks SOOO good, but do you have any ideas for what those of us in non-Velveeta-selling countries could do? Somehow I don’t think a plain cheese would suffice?
That’s nice that you got the walk in with your boys. Some type of activity in a day is wonderful even just long walks!
