Happy Weekend
Hi, guys!
Just a quickie post– mostly for accountability’s sake, but also to tell you about a cool event taking place in New York City next weekend that you could win a ticket to attend!
Snack
At NuVal, I made myself a mug of sugar-free hot cocoa. And, when I got home, I whipped up a 3-Minute Cookie, but I changed the recipe to give it a more “cake-y” texture.

I combined the following ingredients in a microwave-safe bowl:
- 1/4 cup oats
- 1/8 cup liquid egg whites
- 1 tbsp smooth peanut butter
- 1 tbsp Greek yogurt
- 1 tbsp Vega Smoothie Infusion
- 1/4 tsp vanilla extract
- 1/4 tsp baking powder
Then, I nuked the mixture in the microwave for 60 seconds. The consistency was softer and denser than my original recipe. It was also more filling. I actually might like this “cookie” better.

Hey Tina, have you tried PB2? It is lower in fat and calories than regular peanut butter. I know you have your favorite and I totally understand that you don’t get between a girl and her favorite peanut butter. I am asking because it would go really well in the cookie! It would give you the flavor and cut back on some of the fat/calories. It is not as sweet as regular peanut butter, so I like to add a little vanilla stevia drops to it…so good. Just thought I would suggest it. Speaking of which…I need to try this cookie soon!

I just tried your original cookie about 5 minutes ago. All I have to say is yum!! I gave mine an “icing” of 2tsp vanilla yogurt mixed with 1 tsp peanut butter. and it was heaven!! Loved it, you are a genius!

I am so wanting to try this cookie, love the addition of Greek yogurt. This weekend I am giving it a whirl. We going skiing, Think I could put this in my pocket instead of a power bar? I would like this better, the bars are too sweet for me. This cookie is better balanced.

Hi there! This was my second attempt at making your cookie. The first time I added amazing meal to it and i could not even eat it. This time I skipped the amazing meal and added the greek yogurt and barney butter and its edible, but not delicious. It sort of tastes like a protein pancake. Hmm.. guess I have to keep playing with it.
