So, I’m sort of obsessed with my breakfast creation this morning.
Quaker sent me a ton of instant oatmeal for their Create Your Day campaign, so I’ve been trying to think of ways to incorporate the instant stuff into my diet. Don’t get me wrong, I love ALL types of oatmeal– I just know that the old-fashioned variety is a more nutritious option.
So, I present to you my “Baked” Pumpkin Oatmeal!

Ingredients:
- 1 packet of Maple Brown Sugar instant oatmeal
- 1/4 cup canned pumpkin
- 1/4 cup liquid egg whites
- 1/2 tsp baking powder
Directions:
- Combine all ingredients in a microwave-safe bowl; mix well
- Cook in microwave for 2 minutes
- Allow to cool before enjoying

The end result was a warm, sweet, cake-like oatmeal. I’m pretty sure the rest of my instant oatmeal will turn into “baked” oatmeal! It’s really good!

I’m heading downtown to Healthworks for one of my favorite workouts. (Physique 57 should definitely be added to the list!!! I’m SO SORE today!)
What’s your favorite workout?
Enjoy your Saturday!

yum – looks like a giant, healthy oatmeal cookie! Now I know what to do with my excess of instant oats, too
Where did you get that ramekin and how big is it? I’m still “putting together my kitchen” since we had nothing when we got married
Sounds like a good breakfast. My Favorite workout… if I can’t get out for a good 40+ mile bike ride is double spin class. I am actually headed to the gym myself for a fun back to back spin classes. Enjoy your workout!
That looks great! My favorite workout is any kind of fuctional work or plyometrics…looove it.
My favorite workouts would have to be yoga class and spinning class. I hate running, but have to do it since its part of my job (Air Force). Lately, I have also been supplementing with the P90X workouts.
Looks delicious!
Yum!!! Looks like an oats souffle!!
I love treadmill work outs that switch it up every minute! I’m not a huge fan of weights but I’m trying to like it more and more
Today would have been a perfect day here for baked oatmeal! Cold and rainy! I’m pretty much addicted to the body combat class at my gym. It’s a mix of kick boxing and martial arts. You literally don’t stop punching, kicking, and jabbing the entire hour. Ahhhmazing
Yummy looking breakfast!
My favorite workout is Bikram Yoga! The feeling after a class is incredible!
My favorite workouts are Body Combat and Body Pump! I love the high intensity, strength, and energy of Combat, and the muscle fatigue of Pump. Woooo!
I would think the baked oatmeal would work with non-instant oats as well, right?
Favorite workout: (other than running) Plyometrics – they are so hard! – Especially the Burpee.. and I love boxing!
My fav workouts are anything with my trainer. He always changes it up and makes it fun!
The baked oatmeal is a great idea; I just might have to try that.
I’m a HUGE fan of the Les Mills program: Body Pump, Body Attack and Body Combat. It’s hard to pick a favorite because I like them all differently.
Delicious breakfast! I was debating making my favorite baked oatmeal recipe this morning.
My favorite workout would have to be running. It allows me to clear my mind and get in a good sweat. But I also love a challenging weight session that leaves you sore the next day. I oddly love that feeling, probably because it means my body is being challenged.
Enjoy your Saturday!
Your baked pumpkin oats look so good! I already had my breakfast but I know what’s on the menu for tomorrow morning
.
I love your recipes, thank you for sharing!!
That looks so awesome! My favorite right now is probably power yoga or running outside (on a nice day).

Depending on my mood, my favorite workouts vary from being a hard core strength routine to an awesome HIIT treadmill run!
I like to run for cardio but I also love Total Body Conditioning at my gym- cardio and strength training in one class
i might make that oatmeal right… now.
my favorite workout is hot yoga for sure. it’s the first “workout” i’ve ever done because i love it and and it makes me feel good. not because i want to lose weight.
My favorite workout is running! 8 miles is my go-to distance.
Oh my gosh, that looks absolutely incredible!
Oh yum, such a good idea!! I actually have tons of instant stuff in the pantry that needs to be used (used to eat it before I discovered the goodness that is Old Fashioned Oats) and I might just have to try that technique!!
Physique 57 is incredible!! Im in pretty good shape already but since I’ve started doing those dvds, my body is totally changing!! I can totally understand being sore!! Your breakfast looks delish by the way
Would this not work at all with regular slow oats? It looks so tasty but I don’t have any instant
This looks so good! I’ve been checking out your meals for the last few days, and I am really loving this one. I always have a lot of instant oatmeal around during the winter, but by the time spring comes, it gets pretty boring. I’m really excited to try this as I love pumpkin! I can’t wait to see what other baked oatmeal treats you try….
I LOVE boxing. Love it!
Sounds fantastic!!! I really like kickboxing, spin, and pilates!
My favorite workouts are probably yoga and pilates! I love how they tone my body! I also LOVE the 30 day shred and I’m beginning to love running. I used to do spinning but haven’t been in a while. You can add that to the top of the list too!
What a great recipe! I just ended up with a bunch of instant oatmeal that I picked up for a which travel snack, but I’m usually so much more fond of stovetop. This is a perfect solution. Thanks!
I’ve been baking my oatmeal in the oven and it turns out delish! It is more time consuming, but so worth it! Since I’m a runner, my favorite workout is running! Ha!
I love 24 Lift, which I sounds pretty similar to Body Pump. My favorite part of it, is you really work every single muscle and that hour class flies by!!
I have to try this baked oatmeal thing. I have a TON of instant oatmeal at home.
My favorite workout? A solid run, especially outside. There is nothing like the high after accomplishing it.
i can’t remember the name, but i used to take a step/weights/body pump type class (it changed daily) at the gym I used to train at. it was so fun to workout with my clients and just have fun! plus, it was totally killer and i went home sore every time
Baked pumpkin oatmeal looks awesome!!!
As for my favorite workout: an good run around the Eiffel Tower by sunrise! The view is just too beautiful…
My favorite workout would probably be skiing… it doesn’t seem like a workout since it’s so fun.
My favorite workout is either pilates, which I just started doing this year, or the stationary bike. Both are relaxing & good workouts for me
My mom just bought a box of instant oatmeal with all those yummy flavors but I haven’t tried them yet! So thanks for the recipes- keep em coming!
I used the regular oats for oatmeal last week and they work yuckkk! So I am excited to try the instant! I hope it will be better!

I am obsessed with Body Pump and Body Combat. LOVE THEM! I am trying a new class today Obsidian. I hear I won’t be able to walk or move for 4 days..ha! Wish me luck:)
Oatmeal suggestion:I know some people like to put oatmeal in their smoothies. Favorite workout: Hiking!
I have been doing the P90X videos with a friend and I’m really enjoying them.
WOW that looks SOOOOO good!
Oh yum. Baked oatmeal is always great.
This is a good idea! I’ve seen a lot of baked oatmeal recipes that require the oven and a lot of time…and I’m impatient
My favorite work-out would have to be running
My favorite workouts are running!! Marathoner at heart I guess. I HATE to lift weights but I do it twice a week every week because I know it is good for me!
Oatmeal packets are good for pancakes. I’ve used the weight control kind, but I’m sure any would work. Mix oatmeal packet, 1/4c plain yogurt, 2 egg whites, 1/8 tsp baking powder and soda.
Oh, the friend I’m staying with has so much instant oatmeal in her house, and I really want to try this… but we’re snowed in and she doesn’t have any canned pumpkin. Boo!
My favorite kind of workout is the functional training ones they put me through at Physical therapy. I always got a great run in and was pouring buckets with all the full body moves. I try to do them on my own at the gym but I’m not as good at the order.
That looks delicious! I have some oatmeal packets lying around here, too, and normally just use them for when I need to eat breakfast at my desk – but I might have to try this! Enjoy your Saturday.
What’s my favorite workout?
For cardio, I love my Zumba class. It fills my need to dance. I can see the people working out on the treadmills and elipticals through one of the gym windows during Zumba and I always feel sorry for them. They could be getting a similar workout that’s so much fun if they joined us in the gym.
For strength and flexibility nothing beats a good Yoga session.
