A Sweet Surprise

I’m having some major sugar cravings today. Watch out! 8-O I’m not sure what’s up with my appetite, but I guess I’m just going with it! ;-)

Dinner

Our kitchen cabinets are suddenly jam-packed with food, so Mal and I are trying to eat what’s in them instead of buying more. So, when taking inventory this afternoon, I found a random bag of quinoa that was pushed to the back of the cabinet. I hadn’t eaten quinoa in ages, so I figured it would make a great option for dinner– and it did! :-D

In the mix:

  • Quinoa
  • Spinach
  • Sweet potato
  • Mushrooms
  • Walnuts
  • Balsamic vinegar
  • Maple Syrup
  • Cinnamon

Sorry that I don’t have exact measurements– I just threw everything in a bowl, mixed it up, and tested it until it tasted good. I baked the sweet potato before adding it to the bowl and threw the mushrooms in with the quinoa, while it was cooking, to soften them up.

There were so many delicious flavors in tonight’s dinner. The sweet potatoes + maple syrup especially hit the spot! ;-)

Dessert

Mal did our grocery this week, so (not surprisingly) he came home with a number of items “off” the list. In addition to Sun Chips, my husband purchased some Pillsbury Refrigerated Cookie Dough. I suppose his purchase was a blessing in disguise, considering my wacked-out sugar cravings today. All day, I just wanted to eat cookies– and my wish came true! :mrgreen:

After dinner, we baked a half dozen cookies for dessert. I enjoyed two chocolate chip cookies while my husband ate four– plus a good-size serving of Malted Milk Ball Gelato. I wish I had taken a photo of his dessert. It was intense!

I’m taking the rest of the night off from working. My brain is fried. Plus, I have a lot of Ellen episodes to catch up with! ;-)

I just tried quinoa for the first time tonight, and it was amazing! Just in case you need another idea for your quinoa: I dressed mine in an herb vinaigrette. I just threw olive oil, lemon juice, thyme, basil, salt, pepper in a bowl, whisked it, and threw it in with the quinoa after it got done cooking. Amazing!!

I LOVE Pillsbury refrigerated chocolate chip cookie dough. Frankly, I haven’t found any cookie, “homemade” or otherwise, that can match the perfect amount of crisp-ness and gooey-ness of refrigerated cookie dough. That paired with a glass of ice cold milk is my perfect dessert.

my sugar/carb cravings have been out of control this weekend also! I KNOW it’s not stress cause work has been normal lately! What if it’s cause we keep feeding our cravings which makes us want them more often?

Haha, I’ve had a box of quinoa in my cabinets forever. I’m so hooked on polenta, I keep putting off making it–but I’m inspired to give it a try!

Quinoa is the best. My husband is kind of anti whole grain, but loves quinoa, so it’s a good compromise for us!

I’ve read that upping zinc intake can help with sugar cravings. Meat sources of zinc allow the body to absorb more than vegetarian sources.

I’ve experienced a great sweet craving when eating low fat meals, so adding some avocado or other healthy fat has helped as well.

Just some suggestions to share! :)

You inspired me to go out and buy some quinoa for dinner tonight – just had it tabbouleh-style with chopped onion, cucumber, tomato, parsley (cilantro?) and mint dressed with lemon juice, vinegar and a bit of olive oil. Served it with foil-baked salmon with soy sauce, lemon juice and cilantro. Hello yum! It was really filling!

I just recently used quinoa for my dishes and I find it delicious. I enjoyed using it.
