Three Years Ago…

December 8, 2009

…in New York City, on a freezing cold day, Mal got down on one knee and asked me to marry him! :-D

I can’t believe that day happened 3 years ago! It seems like just yesterday!

Here’s our engagement story as well as a recap of our most recent trip to the scene of the crime! ;-)

Breakfast

This morning’s breakfast continued into the mid-morning with an eggnog misto (coffee + eggnog), which I made at home and took with me to NuVal.

It took me until lunchtime to finish it all. I definitely savored every sip of it. Eggnog has a special place in my heart this time of year! ;-)

Lunch

I ate lunch while working away at my desk. I had a container of Oikos Greek yogurt + Uncle Sam cereal + banana. It was a yummy, satisfying lunch.

Snack

When I got home from work, I made myself a quick snack before taking Murphy for a walk around the neighborhood. I made myself a piece of whole wheat toast with peanut butter, agave nectar, and raisins on top.

I can’t wait to get my new camera! Mal bought me an early Christmas present from Open Sky! :mrgreen:

Dinner

Mal and I hit the gym as soon as he got home from school. Even at 5:00 pm, the place was PACKED! I’m so glad that I workout in the mornings. I don’t think I could deal with that madness everyday.

While I showered, Mal started dinner. He made his infamous American Chop Suey, which is the easiest recipe ever: cook ground beef, cook pasta, add Campbell’s tomato soup, and stir. Viola!

While Mal finished making his masterpiece, I threw together a couple of salads. I topped mine with balsamic vinegar.

I love throwing all sorts of stuff into my salads. It keeps things exciting! ;-)

Aw, I love your story! This could just be the New Yorker in me–but I will be very angry at my future husband if he proposes anywhere BUT NYC. I think it has such a unique romanticism about it–and I’m glad you got to start your story here :)

Congrats on the anniversary of your engagement! What a great memory!

I love that you drink egg nog! I love it too, but often find myself forgoing it all through the holiday season because of the fat & calories. I wish I could find it in smaller cartons since my husband won’t drink it at all. Maybe this year I’ll have a cup or two!

The pasta on the salad brought back memories of college for me! I grew up with a diet pretty low in veggies :( So in the dorms, I started adding them to my diet by getting a bowl of pasta and stopping at the salad bar and mixing them together!

I do miss the occasional eggnog. Since I can’t have dairy or soy…that makes it kinda difficult! I am with you on throwing everything on my salad. I eat salads almost twice a day and I throw everything on them. It definitely keeps them different and insures that I get my greens in everyday!
