…in New York City, on a freezing cold day, Mal got down on one knee and asked me to marry him!
I can’t believe that day happened 3 years ago! It seems like just yesterday!
Here’s our engagement story as well as a recap of our most recent trip to the scene of the crime!
Breakfast
This morning’s breakfast continued into the mid-morning with an eggnog misto (coffee + eggnog), which I made at home and took with me to NuVal.
It took me until lunchtime to finish it all. I definitely savored every sip of it. Eggnog has a special place in my heart this time of year!
Lunch
I ate lunch while working away at my desk. I had a container of Oikos Greek yogurt + Uncle Sam cereal + banana. It was a yummy, satisfying lunch.
Snack
When I got home from work, I made myself a quick snack before taking Murphy for a walk around the neighborhood. I made myself a piece of whole wheat toast with peanut butter, agave nectar, and raisins on top.
Don’t these photos look fuzzy? Ugh.
I can’t wait to get my new camera! Mal bought me an early Christmas present from Open Sky!
Dinner
Mal and I hit the gym as soon as he got home from school. Even at 5:00 pm, the place was PACKED! I’m so glad that I workout in the mornings. I don’t think I could deal with that madness everyday.
While I showered, Mal started dinner. He made his infamous American Chop Suey, which is the easiest recipe ever: cook ground beef, cook pasta, add Campbell’s tomato soup, and stir. Viola!
While Mal finished making his masterpiece, I threw together a couple of salads. I topped mine with balsamic vinegar.
To drink, I enjoyed some H20, straight up from my water bottle.
Check out my sweet sticker from Mission Minis. Their cupcakes are heavenly!
All together…
Eventually, dinner ended up like this:
I love throwing all sorts of stuff into my salads. It keeps things exciting!

So cute! I can’t believe it’s almost been 2 years since I got engaged!
Top salad with American Chop Suey is a great idea
looks very yummy!
Happy anniversary!
It’s been so long since I’ve had american chop suey, and I must say that sounds excellent at the time
oh that’s amazing! and I know right where you are in that pic. I love the chocolate store behind you.
Aww I got goosebumps reading your engagement story… So sweet.
Aw, I love your story! This could just be the New Yorker in me–but I will be very angry at my future husband if he proposes anywhere BUT NYC. I think it has such a unique romanticism about it–and I’m glad you got to start your story here
Congrats on the anniversary of your engagement! What a great memory!
I love that you drink egg nog! I love it too, but often find myself forgoing it all through the holiday season because of the fat & calories. I wish I could find it in smaller cartons since my husband won’t drink it at all. Maybe this year I’ll have a cup or two!
Happy engagment anniversary!!!
I love to do the same thing with salads. Tonight, I have my Rice-A-Roni on top of mine
Congrats on the three years since your engagement. Today has to be a magical day. You two are adorable and look so happy!
I got engaged 5 years ago tomorrow. Time flies!
I love looking back at our engagement photos, etc. It is so fun. Glad you had a good day.
yay for great memories! You guys are so adorable – cheers to many more milestones
I’ve never been a fan of eggnog but I think a lot of it is that I know what’s in it…
3 years! That’s so exciting!
What a cute engagement story!! Thanks for sharing!
SO LOVELY!!!
Happy engagement anniversary! I need to try the american chop suey! It looks so easy to make!
I’m never going to win any blog giveaways, am I?

I always end up mixing my pasta & salad together on my plate =)
I also have been known to put “crazy” things on my salads too. Looks good like always
i’m the crazy girl who once put a banana in my salad! i love switching it up!
Congrats on the anniversary! you and Mal are adorable!
Haha i just like the words “chop suey”.. but that looks yummy!
I love the fact that your anniversary falls on my birthday! Happy anniversary to you and happy birthday to me!
The pasta on the salad brought back memories of college for me! I grew up with a diet pretty low in veggies
So in the dorms, I started adding them to my diet by getting a bowl of pasta and stopping at the salad bar and mixing them together!
Your engagement story is so sweet! I love memories like that!
Love flashback posts!
Always nice to put together an easy dish. I did the same tonight. No slaving over the stove!! Yay
Awww, congrats on the 3rd anniversary of your engagement! Oh and I’m going to try that pasta, beef, tomato soup recipe. LOL
Congrats! You seem like such a happy and lovely couple x x
awww- love that you celebrate the day you got engaged
So sweet. I need to get some eggnog- its soooo delicious. Love the idea of homemade eggnog mistos.
Awwww– happy engagement anniversary! My hub and I have already forgotten the exact day of our engagement…oops! Neither of us can agree on whether it was August 14 or August 15
Your pasta looks delish!
I do miss the occasional eggnog. Since I can’t have dairy or soy…that makes it kinda difficult! I am with you on throwing everything on my salad. I eat salads almost twice a day and I throw everything on them. It definitely keeps them different and insures that I get my greens in everyday!
Aw what a sweet engagement story! And go Mal on the awesomely simple recipe!
You and Mal have such a wonderful relationship–thanks so much for sharing!
Congrats on 3 years!
This is such a sweet and touching post, Tina! Happy Anniversary.
awww… i love cute romantic stories. congrats to a great relationship and happy life.
Is that all the pasta you ate or did you have more on the side?
I live in New York and I’ve been to that wine bar! Thats so cute that you guys got engaged there.Happy Engagement Anniversary!
