Same Meal Twice
There were so many leftovers from the Last-Minute Lasagna, I ended up eating it two different times today. It’s a pretty delicious recipe and I hate to see food go to waste, so why not, right? Combined with some homemade salad, it ended up being a nutritious and satisfying meal– both times!
Lunch
I packed-up my leftovers + salad to take with me to eat at NuVal this afternoon. I was so busy creating posts for when I am away in Oregon, I basically chowed lunch without paying much attention to the meal. It was over before I knew it!

Snack
After work, I picked-up Mal from school. On my way, I stopped at Dunkin’ Donuts to grab him an iced coffee. Of course, I had a few sips of it.

I also bought us each a special treat.

Holiday munchkins! Holy yum! I loved mine! Mal wasn’t nearly as ecstatic about his, but he ate it anyway.

Dinner
For dinner, I repeated lunch: homemade salad + leftovers.

Great leftovers… again!

For dessert, I enjoyed 2 small handfuls of chocolate chips. I think Murphy thought he was getting some of them.

I’ve been inspired by your dinner last night, and will be making Last-Minute Lasagna for me and the hubby to finish up our fridge food before leaving town! Hope it’s a fabulous evening for ya!

Tasty leftovers are the best thing because it’s a meal you can look foward to without dreading making

Leftovers are one of the greatest things EVER. I love repeat meals…. I’m not ashamed!
Murphy can keep wishing

Tasty leftovers are the best. Plus they take hardly anytime to cook.
I’m loving your schedule you posted. As a musician – I have strange hours and I also have to self motivate to practice. I think I should try revamping my schedule to start earlier and practice first.

I’m a huge fan of leftovers. Quick, easy, and delicious!

I love leftovers and actually *plan* for them in my monthly menus. I’m always so bitter when my hubby eats it all and there’s no leftovers

I think guys get less excited about food. When Corey and I had coffee with Jenna this weekend, she asked him how he enjoyed our PHENOMENAL dinner in wine country. His reply: “It was good.”
good? GOOD?!?!

Poor Murph got super excited for those chips. Maybe then would have been the time to bust out those super cute dog treats?

I love eating left-overs, the flavors get a chance to mesh together. Waste none
Enjoy your evening!

So where does super cute Murphy stay while you go out of town or are you taking him with you?
on Dec 22nd, 2009 at 8:29 pm
Oh I love Dunkin Donuts. Their iced coffees are so GOOD! I also always order 2 munchkins. One for me and one for my daughter. We like the cinnamon ones

Some meals are just so good you have to eat them multiple times.

I will be trying that quick lasagna as soon as I can drive to the grocery store again. This snow needs to clear up!
I’ve never put pasta on a salad before, but you know, it sounds like a great idea. Do you use the sauce instead of dressing?
on Dec 22nd, 2009 at 9:07 pm
I love GOOD leftovers. I don’t like wasting food either but there’s nothing worse when you really don’t like the leftovers…..then what?
on Dec 22nd, 2009 at 9:19 pm
You are going to Medford?! So close, yet so far away…

@Tasha: I guess I use the sauce instead of dressing. I’m not a big salad dressing person.

I love that with all the holiday treats around, you manage to do a great job getting in all your veggies! That’s healthy livin’!
on Dec 22nd, 2009 at 10:34 pm
I love chocolate chips for dessert. Such a perfect serving size of treat!
on Dec 22nd, 2009 at 10:47 pm
I hate seeing food go to waste. Leftovers eaten are better than leftovers in the trash! Have a great evening with the gents!
on Dec 22nd, 2009 at 11:20 pm
That was my dessert! Except mine were swirls. I’ll eat the same thing meal after meal if it’s good…I hate to waste it!
on Dec 22nd, 2009 at 11:29 pm
This is sick. I was going to share my favorite munchkin flavor with you… AND I COULDN’T REMEMBER IT! I think I need some Munchkins, I haven’t had them in so long!!!!!!
Iced coffee after a snowstorm makes me laugh! I would have been shivering!!! Go Mal (and you for taking a few sips!!!)
on Dec 22nd, 2009 at 11:37 pm
Leftovers are definitely necessary some of the time!
on Dec 22nd, 2009 at 11:45 pm
I’m with Mal, I don’t like sprinkles.
on Dec 22nd, 2009 at 11:57 pm
Whenever I make lasagna I always eat the leftovers for every meal in the following days. LOVE lasagna!
