My First Breakfast Cookie

December 15, 2009

Good morning!

I am devoting my morning to WRITING since I haven’t done a damn thing on my book yet. I am making progress today!

Breakfast

I’ve read about Gina’s famous Breakfast Cookie all over the blogs for months now, so I finally decided to give it a whirl myself.

To be honest, as I was making my Breakfast Cookie last night, I kept thinking: how the heck is this going to taste good and fill me up? I had faith in the Fitnessista, so I followed her directions and put my Breakfast Cookie in the fridge overnight to do its thing.

This morning, I was pleasantly surprised with my Breakfast Cookie! :-D I spread some Barney Butter on top and dug right in. It was SO delicious. It tasted just like regular oatmeal, but much more hearty. I didn’t think the Breakfast Cookie would fill me up like my usual bowl of oats, but man, did it! My stomach is very content right now. ;-)

As for my Breakfast Cookie ingredients, I used Barney Butter as the nut butter and I substituted the protein powder for Vega Whole Food Smoothie Infusion, which worked great.

I also drank some Sugar Cookie Sleigh Ride tea with breakfast.

Question of the Day

What’s your favorite recipe from the blog world?

I make a breakfast cookie, too, but mine is baked. Very hearty! My latest was Ginger Apple Oat – perfect for the season!

Hmmmm…favorite recipe from the blogworld is so hard! I love so many of them. I guess I would have to say Kath’s Smoked Salmon and Parmesan Omelet Muffins! Yum!

Given your love of cookies, I’m surprised this was your first breakfast cookie – now any day can be cookie day :)

Gena’s banana soft serve is a favorite of mine, as are kale chips and Kath’s vanilla sweet potato soup. Oh, and of course nut butter-topped oatmeal! I love getting inspiration from the food blogosphere!

I recently wrote a similar post about my first breakfast cookie also inspired by Gina. Oh and I’m eating one right now. They are delish and much more filling than I’d ever expected. It’s a nice change from my regular hot oats. Big fan of this recipe!

Breakfast cookies always look so delicious, but what is the texture like? Could you actually pick it up or is it more soft and delicate?
