M & T’s Excellent Adventure

Mal and I totally rocked our road trip from Eugene to Medford, Oregon this afternoon! What a blast! 8-)

Before we started our journey down I-5, we stopped for lunch at PF Chang’s.

After all of our travel drama in the past 24 hours, I needed a beer… in a bad way. I went with the local Pyramid Seasonal brew. Mmm! I enjoyed every single sip.

For lunch, I ordered the Ma Po Tofu dish, which was crispy tofu in a vegetarian sauce with steam broccoli. The tofu was awesome! I guess “crispy” makes everything taste better! ;-)

The meal was served with brown rice on the side.

The combination of Ma Po Tofu + brown rice was such an enormous meal, I ended up taking a lot of leftovers home. Hopefully, they won’t go to waste.

Lunch concluded with a fortune cookie.

After lunch, Mal and I headed next door to the Nike store to buy some University of Oregon gear. My sister-in-law went there for college, so the whole family is huge Ducks fans now. (If you didn’t know already, Nike started at the University of Oregon back in the mid-60′s.)

The Nike store had all sorts of fun running inspiration.

Mal and I shopped around the Nike store for quite awhile before deciding on some goodies. Mal bought a new coat and an Oregon hat.

And I bought a sweet U of O t-shirt. It’s one of those soft, broken-in tees.

We were so close to U of O, we decided to do a quick driving tour of campus. I didn’t see all that much, but it looked like a nice place to go to school.

And then we finally hit the road!

Like any good road trip, we blasted the tunes. The station “80′s on 8″ was definitely a favorite, but we also rocked out to a bunch of other classics.

Midway through the trip, we took a pit-stop at McDonald’s to use their bathroom. Next thing I know, Mal and I agreed to share a chocolate milkshake. I haven’t had one of those babies in YEARS! It tasted good going down, but we’ll see how my stomach holds up! :-?

We just arrived in Medford a little while ago. I’m not sure what’s on the agenda for tonight, but I am SO happy to finally be here! Holy travel headache! :-? But, I’m glad that Mal and I made the best out of a not-so-great situation. Our little road trip was such a fun time, and I’m glad that I got to spend some quality time with my hubby. :-D

Time for dinner at the country club! Better get dressed!

    I LOVE how optimistic you are. I hate ANY layover or cancellations! What makes me smile is how Mal and you take an annoying situation and transform it to a mini roadtrip for a lovely LOVING couple. :) Enjoy the rest of your trip

    YEAHH!! I go to U of O and I love it! Glad you got to check out the campus and what not. Eugene is an awesomely funky place. Next time you’re there, be sure to go to Prince Puckler’s Ice Cream — right across the street from the U of O campus… basically the best ice cream EVER! :)

    I’m impressed! A chocolate milkshake, for us the McDonald’s bathroom stop usually turns into a milkshake AND an extra meal we don’t need :-)

    the McDonald’s shakes in my area are now served in see-through cups, have an overflowly type of lid, and come with whipped creams and sauce drippings. plus they are double the price they used to be, but they are much much classier now.

    Okay, after reading this post, I can’t believe you were in my town and probably drove right by my office at work. Anywho, glad to see there are lots of Duck fans commenting. The manfriend and I just went to PF Changs last night. I had the coconut curry veggies w/ brown rice. Amazing and healthy choice! Yumm.

    Hi Tina! This is going to sound super weird but I have been reading your blog for quite awhile, I don’t even really know how I found it but it’s one of my daily reads. Anywho, here’s where the weirdness comes in. Shortly after I started reading your blog you posted a pic of you and your hubby, I couldn’t get over how familiar he looked and I finally figured it out! My Uncle is married to Judy (BC’s neice) and I have met and even had Thanksgiving dinner with Mal before. His grandma’s sugar cookies are the BEST and she is a doll! I hope you had a lovely holiday and I’m so sorry you had such a crappy trip home.
