Sunday Baking & Workout Cookies

Pandora + baking = truly wonderful Sunday morning! There’s not much more I could ask for on a Sunday morning! :-D

This morning I got busy in the kitchen baking some delicious Workout Cookies. They’re perfect for pre- or post workout fuel with lots of whole grains, fiber, low-fat protein, healthy omegas, and some subtle sweetness.

The inspiration for my Workout Cookies came directly from Lisa’s recipe for Homemade Energy Bars, which she sent to me a few weeks ago to try out. (I later met Lisa in person at the Foodbuzz Festival, which was pretty cool!) Lisa’s recipe sounded so easy (and cheap) to make, I just had to test it out.

While baking, I made a number of changes to her recipe to make my own Workout Cookies.

Workout Cookies

Makes 12 cookies

Ingredients:

  • 1/4 cup all-purpose flour
  • 3/4 cup old-fashion oats
  • 1/4 cup ground flaxseed meal
  • 1/4 cup brown sugar
  • 1/4 cup raisins
  • 1/2 teaspoon cinnamon
  • 6 oz. plain Greek yogurt
  • 1/8 cup canola oil

Directions:

  • Preheat oven to 375* F.
  • Spray 12 muffin cups with non-stick cooking spray.
  • Combine all ingredients together in a large bowl. Mix well.
  • Divide batter among muffin cups evenly. (The cups will only be about 1/3 full.)
  • Bake for 12 – 15 minutes.

I sampled one after they finished baking. SO GOOD! :-D

Lisa suggested, after baking her Energy Bars, to place them in a plastic bag and freeze them to keep them fresh. Then you can take them out when you are ready to eat them. I did the same thing for half of the batch of Workout Cookies.

After baking, Mal, Muprhy, and I went for an hour walk around Southie. We needed eggs for breakfast, so we decided to make a trip out of our errand to the grocery store. Murph was so pooped after our walk. He passed out on the floor when we got home.

Breakfast

Mal made us the most amazing breakfast this morning: egg sandwiches with horseradish cheddar cheese, sliced ham, and maple sausage on the side. The horseradish cheddar totally made the meal! I also had drank some iced coffee with breakfast.

I have a busy, but fun afternoon ahead of me. I’m off to a fitness blogger event and then I am hitting Banana Republic for their Friend & Family sale!

    Mmm, your house must smell delicious from baking in the morning. I’d be drooling all day! And OMG, horseradish cheddar cheese!!! I LOVE anything horseradish! Horseradish hummus = essential for delicious sandwiches ;) Have a fabulous Sunday!

    Hmmmm those workout cookies sound so good! I had a homemade vegan energy balls recipe that I used to make, but I lost the recipe and don’t remember it! :-( Maybe I’ll try these instead.

    It took me awhile to find Pandora but now I can’t live without it. Nice to have music I like instead of the few stations around here.
