Eating on the Run

Gotta make tonight’s dinner post quick! Mal and I are meeting friends for drinks in about 45 minutes, so I’m eating on the run! Good thing pizza is easy to eat while standing! ;-)

I LOVE pizza! It’s probably the only meal that I could eat multiple days in a row and not get sick of it. ;-)

Sausage, Spinach, and Provolone Pizza

Recipe inspired by Real Simple’s Sausage, Spinach, and Provolone Pizza recipe

Ingredients:

  • 1 store-bought (or homemade) pizza crust
  • 1 tablespoon olive oil
  • 8 ounces ground Italian sausage
  • 1 small bunch spinach, thick stems removed (about 3 cups)
  • 4 ounces (approx. 5 slices) of thinly sliced sharp provolone
  • Salt and pepper to taste

Directions:

Heat oven to 425º F. Spray baking sheet with cooking spray and place pizza dough on top.

Meanwhile, heat the olive in a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until no longer pink, 4 to 5 minutes. Add the spinach and salt and pepper to taste, tossing, until spinach is semi wilted.

Top the pizza dough with the slices of cheese and then sausage-spinach mixture.

Bake until the crust is crisp and the cheese has melted, 12 to 15 minutes.

Amazing pizza combo! I loved the bold flavor of the provolone! It totally made the pizza! :-D

    Hey Tina,
    I could eat Murphy up! Just wanted to fill you in on Pug meet-ups in Boston. They have them once a month. I have a one year old bulldog and we try to attend bully meet-ups too. Ours are held in the South End at Peter’s park. It’s totally hysterical. I googled pug meet-ups and there is one this Saturday. You should definitely check it out if you haven’t been yet.

    mmmm that pizza looks soooooooooo good! i may have to try that with some turkey sausage when i’m off my vegetarian kick. and i swear, murphy is just too cute! i finally started doing that my pug, mr. teddy, a few years ago at meal time, but he looks tortured the whole time! ha!

    i only discovered your blog a few weeks ago, and i love reading it, not only for the content about food and healthy eating but i love when you’re little puggy makes an appearance.

    That pizza looks super yummy. I made homemade pizza tonight also. Mine had mozzarella (usually use goat cheese, but we were out), spinach, red onion and baby bella mushrooms. It was so good! I definitely want to give yours a try soon though.

    Pizza is probably my favorite food. It always makes me happy. Yours looks especially good…..I’d make it but the hubbie doesn’t like sausage of any kind. He doesn’t eat pork but won’t eat anything with the word “sausage” in it no matter what kind of meat it is. :(

    First Concert: *NSYNC – March 19, 1999 – MCI Center, DC :) I was quite the teeny bopper. I was only 5/6 when NKOTB came out and my mom didn’t like their pelvic thrusts, so I had to wait a while for my first concert.
