Lunch at Home

My work schedule is flip-flopped today, so I got to eat lunch at home today! :mrgreen:

Eating lunch at home probably doesn’t sound that exciting, but when you’ve worked 9-5 for your entire adult life, it’s pretty sweet!

I made myself an awesome salad with romaine lettuce, spinach, grape tomatoes, shredded carrot, onions, cucumbers, avocado, balsamic vinegar, and leftover brown rice + roasted shrimp from last night.

I love the combo of balsamic vinegar + avocado! It’s fantastic! :-D

I had a glass of ice water with lunch. Plain and simple.

The second half of lunch was a piece of cinnamon raisin toast with a thick smear of chunky peanut butter on top.

And I had a couple of chocolates on the side, which were the perfect way to end a meal.

    I am lucky enough to enjoy lunch at home too since I have been working from home lately. It is so nice to not feel rushed or have to wait in a lunch line.
    I agree, chocolate is the BEST way to end a meal!

    Eating at home has definitely helped me to stay out of a rut, not spend money on lunch and eat up leftovers! Plus, there’s no box of tempting doughnuts in the coffee room when you work from home!

    i always wish i could eat at home. i feel like i could really utilize the oven & cut down on the excessive amts. of tupperware i go through every day!

    I just started working a schedule where I eat lunch at home a few days a week and I love it! I notice that I eat many more fruits and veggies because I don’t have to worry about packing everything up and taking it to work in tupperware. So much better!

    I might just try that avacado and balsamic combo. I have a weird fear of non-guacamole avacados, but maybe guacamole is only a gateway drug to the world of avacaods. I used to not like guacamole either. Baby steps!

    lunch at home is the best! twice a week I get to do that, its nice to read the paper or blog and just eat a nice, not rushed meal!

    i am all about that thick schmeared cinnamon toast! :)

    Eating lunch at home is awesome because you can choose what you want instead of being stuck with what you brought.

    I love avocado and vinegar and especially when I add a bit of hummus too.

    I love all those foods! I have a hollow leg today ugh! I wish my future job would let me eat at home… Something about the peacefulness of eating whatever your craving at that exact moment.

    I’ve got a soft spot for cinnamon bread (I like mine topped with cream cheese, weird as that sounds…)… but I haven’t had it in ages! I need to find a good whole grain option!
