Good morning and happy Friday! This week flew by, didn’t it?
Guys, I love my new schedule! š Before work this morning, I had time to exercise, bake, do laundry, blog, and have a conference call. It’s so nice to not feel rushed all of the time!
Workout
I hit the gym bright and early for a strength training + cardio workout.
Strength:
- Dumbbell Squats: 50 lbs, 20 reps, 3 sets
- Alternating Dumbbell Lunges: 40 lbs, 30 reps, 3 sets
- PliĆĀ© Squats: 40 lbs, 20 reps, 3 sets
- Leg Press (machine): 110 lbs, 20 reps, 3 sets
- Stationary Dumbbell Lunges: 50 lbs, 15 reps, 3 sets
It takes me about 30 minutes to do 3 sets of 5 exercises for my strength training workouts. It’s just the right amount of time for me– long enough to get a good workout, but I don’t have to spend the whole day at the gym.
Cardio:
- 30-minute interval mix fromĀ MotionTraxx: āDrop a Jeans Size Workout āĖ09 – Interval #3.āĀ I love these interval workouts! Usually, I just space-out on the elliptical while reading a magazine, but these really push me to take it to the next level. I’m usually a sweaty mess by the end! And they’re a good substitute until I can run again!

Pomegranate Coconut Quick Bread
Makes 1 loaf
Ingredients:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 cup packed brown sugar
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup canola oil
- 1/2 cup POM juice
- 1/2 cup shredded sweetened coconut
- 1/2 pomegranate arils
Directions:
1. Preheat oven to 350*F. Grease loaf pan.
2. Combine all ingredients in large mixing bowl; blend well.
3. Pour batter into loaf pan.
4. Bake for 45 minutes until top is firm and an inserted toothpick comes out clean.
5. Allow loaf to cool before serving
This bread is soft and sweet with a little kick of pomegranate. It would be perfect as a dessert or even served along side a fruit salad for a healthy breakfast. I ate mine with a smear of Olivio this morning. Holy yum!

Did you know that yesterday was the 40th anniversary of the internet? At 10:30 pm, on October 29, 1969, the internet was “born.”
My nerdy husband is a huge fan of NPR, so he listened to a special internet anniversary segment and told me all about it last night. If you want to read more, here’s some info from Wikipedia about the history of the internet.
