Pomegranate Coconut Quick Bread

Good morning and happy Friday! This week flew by, didn’t it?

Guys, I love my new schedule! :-D Before work this morning, I had time to exercise, bake, do laundry, blog, and have a conference call. It’s so nice to not feel rushed all of the time!

Workout

I hit the gym bright and early for a strength training + cardio workout.

Strength:

  • Dumbbell Squats: 50 lbs, 20 reps, 3 sets
  • Alternating Dumbbell Lunges: 40 lbs, 30 reps, 3 sets
  • Plié Squats: 40 lbs, 20 reps, 3 sets
  • Leg Press (machine): 110 lbs, 20 reps, 3 sets
  • Stationary Dumbbell Lunges: 50 lbs, 15 reps, 3 sets

It takes me about 30 minutes to do 3 sets of 5 exercises for my strength training workouts. It’s just the right amount of time for me– long enough to get a good workout, but I don’t have to spend the whole day at the gym.

Cardio:

  • 30-minute interval mix from MotionTraxx: “Drop a Jeans Size Workout ‘09 – Interval #3.” I love these interval workouts! Usually, I just space-out on the elliptical while reading a magazine, but these really push me to take it to the next level. I’m usually a sweaty mess by the end! And they’re a good substitute until I can run again!

Pomegranate Coconut Quick Bread

Makes 1 loaf

Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup packed brown sugar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup canola oil
  • 1/2 cup POM juice
  • 1/2 cup shredded sweetened coconut
  • 1/2 pomegranate arils

Directions:

1. Preheat oven to 350*F. Grease loaf pan.

2. Combine all ingredients in large mixing bowl; blend well.

3. Pour batter into loaf pan.

4. Bake for 45 minutes until top is firm and an inserted toothpick comes out clean.

5. Allow loaf to cool before serving

DSC_0013This bread is soft and sweet with a little kick of pomegranate. It would be perfect as a dessert or even served along side a fruit salad for a healthy breakfast. I ate mine with a smear of Olivio this morning. Holy yum!

My nerdy husband is a huge fan of NPR, so he listened to a special internet anniversary segment and told me all about it last night. If you want to read more, here’s some info from Wikipedia about the history of the internet.

I listened to that same NPR segment. Go Mal! My first encounter with the internet was in 1997. It seems like a million years ago. It was at the first real job I had after high school (mid college). Needless to say, I was hooked. Your bread looks phenomenal.

Hey Tina…when you say you do 40 lb lunges are you doing a 20 dumbbell in each hand? Just wondering!!! Your strength workout this morning sounds awesome, lunges and squats are my fave!!

Tina, You can lift a lot of weight! I am impressed! I am the girl in the gym holding 8 pound weights and struggling!

I’m not sure when my first encounter with the internet was, but I know it involved using dial up AOL and instant messenger. I thought it was so cool!

oooo, anniversary of the internet?! *major computer dork right here*
my parents got their first PC back in… ’97? something like that. i started using it when i was 9-10, and then a couple years later my mom and i got a MAC and i found out about http://www.neopets.com and…. there went a good few years of my life. lolz. neopets did let me keep in touch with my best friends after my parents split up and i moved away w/ my mom from my hometown, and i learned a lot of HTML skills. i remember the day my friend and i figured out how to code images into our little website, and we were sooo excited. bahaha

It’s so funny to remember what life was like when I was first getting on the Internet. I would run home from school each day and sit down to my dial-up AOL so I could AIM with all my friends (who I’d just seen at school all day!) Usually the signal was busy the first few times and it was always so exciting to finally get on. Sometimes my mum would accidentaly pick up the phone while I was online, I’d get kicked off and get soooo mad!! Oh, the good old days :O))).

My first encounter with the internet took place when I was in 9th grade. After months of begging (on my part), my parents finally gave in and got an account with AOL. I remember feeling like I was the LAST person in the world to get connected to the internet. (Not the absolute greatest feeling when you’re 14!) In any event, instant messager was all the rage, and I used it a lot to chat with my friends, possible boyfriends, etc :) . After a few months, my parents readily admitted that AOL was the best purchase they ever made, because it resulted in a lot less phone time from me!

Intervals are awesome because they make the time fly by which is a big plus in my book. That loaf looks delicious!

We first got internet when I was in middle school – I don’t really remember my first encounter but I do remember the sounds the computer would make when it would dial up. Haha :)

I don’t remember the year, but my first encounter with the internet was definitely AOL – using messenger and entering some chat rooms (SCARY). Gosh – do they even have chat rooms anymore or is it all blogging/commenting these days?!

Oh my gosh – that bread looks amazingly good. I’ve always shied away from pomegranate because I don’t know how to use it, but now I Want to try it!

And haha – I think I encountered the internet in the mid 90s? I can hardly remember but it was definitely via AOL with the whole “You’ve Got Mail” thing and the dial up modem. Hahah.

Hmmm – my first memories of the Internet are chat rooms in AOL with all my friends in junior high. Random!

I remember first getting on the internet when i was in middle school. My dad liked to play games with friends over the internet and we had to learn it in computer class.

BTW that bread looks good and will be my new experiment with poms tomorrow along with pancakes ala Caitlin. :-)

My first encounter was 14 years ago! I have the same email address since… lol And I kept all the emails messages since! Very funny to read some old things from when I was 13 years old!

Oh and I remember the chat rooms… and the “meetings” : me and my girlfriends we’re giving “dates” to guys at the nearest metro station after school, watch them from further, laugh, and then leave without meeting them. lol So silly!

I think I first encountered the internet around 1994(?). I remember that awful dial up sound. I used to have to bring a magazine with me to the computer so I’d have something to do while the page loaded! We are sooo spoiled now.

I started using it when I was…13 or something like that. That was…1999? I’m not sure! But we had internet before that, I just didn’t use it :P

That’s great you have time for all of that stuff, now that you only have to go to work part-time.
Sounds like you got in a kick-butt work out! My glutes would be screaming after all those lunges!! (Knees too, hehe)

That bread looks like my food heaven! I really need to take a leaf out of your book and enjoy stuff like this now and again. I’ve just started eating without calorie counting and I think I’m a little afraid to eat stuff like this. But I think you have just sold it to me now I just bought a couple of pomegranates (inspired by your recent trip I might add!). Perhaps I’ll take it to the next level and make some of this at the weekend. Do you know how long it might keep?

Nice! Pomegranite cake. The first year I remember the internet was in ’89 with one of those modems you attached to your computer. I remember when we were speaking of BAUD rate. It was with a Color Computer, and I am ow just the biggest geek ever!

huh, I had no idea that yesterday was the 40th anniv. of the internet! I honestly don’t really remember encountering the internet until freshman year of college! We didn’t have the internet in my house during high school. Boy that fees like a long time ago!

I had never heard of MotionTraxx until you mentioned it a week or so ago. I downloaded a couple podcasts and went through an hour of intervals on the elliptical. I thought I was going to die (in a good way!). It was an awesome workout. Thanks for the tip!

I don’t remember my first encounter. But I remember being in High School and having my own computer in my room and staying on AOL instant messenger with my friends late at night :) It’s amazing to think how different it is for young kids now with the internet. Times have really changed!

We actually live right near Gordon’s and went to their huge wine tasting event last weekend! It was awesome! We’ve also taken a couple of classes there, including a sushi making/sake tasting and an intro to wine class before our honeymoon in Napa..They’re so informative and fun!

I was in 4th grade, so 1988? We had a class called “telecommunications” and we got to send email to kids in the Faulkland islands. There was a ridiculously slow modem connection, and it took 7 minutes to send the email. We went on a special website that showed in ASCII code a map where we were sending our email. I realize now how freaking cool that was!!!

That bread looks delicious! I loved reading about your adventures at the POM factory. SO COOL! I love pomegranates. I definitely remember the dial-up days of AOL…it took forever to dial-up! We are so spoiled now. If my computer takes awhile to get a signal now, I feel like I am so impatient!!

My first encounter with the Internet was in 1993, the dawn of the world wide web. I was a freshman in college and the computers in the computer lab had this application I had never heard of before, Mosaic – the first text-only browser! A few short months later, Netscape showed up and pictures and style were born into the world wide web. The internet has certainly come a long way!
