Fitness Magazine Giveaway

Before we get to the giveaway, first things first: I FRICKIN’ LOVE BODY PUMP!!!!! :mrgreen:

Ali and I met at Healthworks after work to take a Body Pump class together, and I must say, I had a fantastic time! Body Pump is the BEST workout!

Here’s why I love Body Pump so much:

To start, you can burn up to 600 calories in one class! Obviously, awesome. Body Pump has also changed my body! I’ve seen muscles that I never even knew I had! Our instructor (Tara B.) was super motivating and pushed us to work hard through the entire class. The music was totally rockin’– I especially loved the triceps track (“Thunderstruck” by ACDC)! And, as corny as it sounds, I loved seeing women lift HEAVY weights– none of that 3 lb. dumbbell stuff! I left class feeling strong and confident. It was GREAT! :-D

Besides Body Pump, I also love Scramble, a new app that I found on my iPhone. I’m kind of obsessed. Just saying.

I was STARVING when I got home from Body Pump, so I threw some leftover roasted beets, sweet potatoes, and a piece of Provolone cheese into half of a pita.

Viola! A fast, simple, and delicious dinner.

The Provolone was a yummy compliment to the roasted veggies.

Dessert was a zillion Oatmeal Cherry Raisin Spice cookies. Once I start, I can’t seem to stop! :oops:

Fitness Magazine Giveaway

    fellow bostonian!!! i LOVE body pump too! I dont have that much time to do it recently because of my work sched, but its a great workout and burn!!

    -my favorite soup is by FAR my mom’s ‘greens and beans’ it is home made with 3 types of beans, kale, onion, carrot, sweet potato, whatever veggies are lying around and it is SOOO GOOD! i can’t even describe its delciousness, and sprinkled with a bit of fresh parm=perfection!!

    I love butternut squash soup the way my boyfriend’s mom makes it for Thanksgiving! And I have a confession — my old favorite soup was New England Clam Chowder in a bread bowl from Pizzeria Uno. Feels good to get that off my chest.

    my favorite soup would have to be split pea crock pot soup- its so easy to assemble, I flip it on, and when I come home from classes, it’s ready! it goes great with a crusty bread. i omit the ham, and it is fantastic!!!:) here is the recipe:
    • 2 cups dry split peas
    • 1 1/2 cups cooked ham, cubed**
    • 1 cup chopped onion
    • 1 cup chopped celery with leaves
    • 1/4 tsp. pepper
    • 2 cups broth (I used chicken broth)
    • 3 cups water
    • salt to taste (after it is cooked)
    **If omitting the ham, please use 4 cups of chicken broth and 1 cup of water.
    Directions:
    1) Layer ingredients in a crock pot starting from the top of the list, down. Do not mix.
    2) Cook on low for 8-10 hours, or high for 4-6 hours. Serve with bread or crackers.

    HW and Body Pump are two things I miss about Boston. Luckily, I found a place in Pittsburgh that has it, so I’m excited to check it out. My favorite soup of the moment is Black Bean.

    I love this soup that they have at Elephant’s Deli which is tomato-orange. They make it with orange juice. It’s not healthy, but it it delicious.

    Hey girl! Pump does rock. I’m becoming an instructor in November. Pump is part of the group of programs I teach now (Body Step and Body Attack). You would LOVE attack!

    I love my moms home-made split pea soup! Ah, its delicious. She rarely ever makes it (as we do not normally have a hambone lying around, ha) but when she does make it, it’s such a treat!!
    Body Pump sounds AWESOME. I’ll have to see if my gym catches on that trend. I would love to try a class!

    I’m a huge fan of soups in general. Hot or cold. Rain or shine. Doesn’t really matter. However, nothing really beats a great bowl of tomato soup. So delicious!!! Especially when paired with a grilled cheese sandwich. Yummy.

    I adore pumpkin soup. The taste, the smell, the texture all remind me of just how much I really love fall. It is also super easy to make, all you need is pumpkin, one onion, mushrooms, garlic, olive oil, and vegetable broth. Bake the pumpkin, cook other vegetables, and puree together!

    theres nothing better than a hearty lentil stoup lol on a cold day. i add potatoes or chicken to mine to bulk it up a bit. or sometimes i put it over rice! mmm good!

    Here is one of my absolute favorites: Carrot Soup!
    * 6-8 carrots peeled and chopped
    * One medium onion
    * 1 potato
    * 1/2 Golden Delicious Apple OR tsp of grated ginger and lemon zest
    * 32 oz. vegetable stock
    * Salt and black pepper
    * Fresh thyme/fresh parsley
    * Oil
    Put a tablespoon of oil in pan and add the onion, carrots, potato, apple OR ginger and lemon zest. Coat all in oil and add salt and pepper.
    Let the vegetables sweat (put the lid on and keep on low heat for 15-20 minutes/ turning veggies every 5 minutes).
    Don’t let the ingredients brown. Add vegetable stock and let the soup come to a boil again. Turn down to very low heat and let the soup simmer for 20 minutes. Then, turn off and let soup cool a little. Use ladle to put portions into blender and puree. Return to pot, bring to boil and season. Add chopped parsley.

    I LOOOVE Fitness magazine, cool apps, soup, and body pump! Great post :)

    Easiest soup recipe that my mom taught me: use V8 tomato juice as broth, add any combo of frozen veggies, let simmer on the stove until warm and steamy. Instant veggie soup!

    my favorite soup ever is pumpkin soup from Gratzi, a restaurant in Ann Arbor, Michigan. can i just say it was the best thing i ever ate? yes, it was :] i have since tried to recreate it at home, but i can’t get the perfect combo of ingredients perfect. oh well, its still delicious!

    I love Fitness Magazine!!

    My favorite soup is split pea soup! I always make mine in my Crockpot. I use 2 cups peas, 4 cups water, 4 cups vegetable broth, 4 large carrots, 1 onion, 3 stalks of celery, few garlic cloves, thyme, garlic powder, salt, and pepper. Combine all ingredients on cook on low for 8-10 hours. YUM :)

    I heart this amazing vegetarian Minestrone “stoup” that I make with so many veggies and so little broth that it looks more like stew than soup. I power it up with spinach, carrots, zucchini, onions, celery, Great Northern beans, tomatoes, veggie broth, tomato juice, spices, ww pasta shells, etc. for a great winter soup!

    I love pureed soups – either roasted or braised veggies thrown in a food processor until smooth. My favorites are broccoli with red pepper flakes and garlic or parsnips + butternut squash!

    I had the best potato and chipotle soup at a Mexican restaurant by my office the other day, truly delicious, but so NOT healthy! Last spring I made asparagus soup that was fantastic! Totally tasted gourmet and besides being time consuming it was really easy to make. And super healthy. Recipe here:

    My favorite soup is homemade roast soup with vegetables…pot roast, tomato sauce, tomato paste, water, macaroni noodles, onion, corn, carrots, and green beans. Top it off with a wedge of cornbread, and you are good to go!

    My favorite soup would have to be this lentil/butternut squash soup I’ve made before. I don’t remember the entire recipe, but it has diced squash, tomatoes, spices, broth, lentils, onions, carrots, etc. SO good and hearty!

    Mixed Bean Chili with Tofu (Courtesy of Cooking Light)

    Ingredients
    7 ounces firm tofu, drained and crumbled (about 1 cup)
    1 1/2 teaspoons ground cumin, divided
    1 1/2 tablespoons low-sodium soy sauce
    2 teaspoons vegetable oil
    1 1/2 cups chopped onion
    1/2 teaspoon ground coriander
    1/2 teaspoon dried oregano
    1 1/2 tablespoons tomato paste
    1 1/2 tablespoons hot chili powder or regular chili powder
    1 teaspoon minced drained canned chipotle chile in adobo sauce
    1/2 teaspoon black pepper
    1/4 teaspoon salt
    2 garlic cloves, minced
    1 1/2 cups water
    1 (15-ounce) can pinto beans
    1 (15-ounce) can red kidney beans
    1 (14.5-ounce) can no-salt-added diced tomatoes, undrained
    1/2 teaspoon cider vinegar
    1/4 cup chopped fresh cilantro
    1/4 cup low-fat sour cream
    Preparation
    Heat a large Dutch oven over medium-high heat. Add tofu and 3/4 teaspoon cumin; sauté 3 minutes. Stir in soy sauce; cook 1 minute or until liquid evaporates. Remove tofu mixture from pan.

    Heat the oil in pan; add 3/4 teaspoon cumin, chopped onion, coriander, and oregano; sauté 4 minutes. Add tofu mixture, tomato paste, and next 5 ingredients (paste through garlic); stir well. Add water, beans, and tomatoes; bring to a boil. Cover, reduce heat, and simmer 30 minutes. Stir in vinegar. Spoon chili into bowls; top each serving with cilantro and sour cream.

    I love this recipe because it is quick, tasty, and it even got my dad to try tofu for this first time. My family loves it and requests it every winter.

    Butternut Squash…so delish and perfect for Fall
    Just bake up some Squash till tender
    While it’s baking (about an hour)…saute some leeks and ginger in a little olive oil
    Add the baked squash, about 4-5 cups veggie stock and bring to a boil…let it simmer for 20-30 minutes then blend it up with a hand blender or food processor…season with S&P to taste…so easy and SO good

    I love making soup this time of year-and love making a chicken soup packed with veggies, usually make my own stock then for an easy way to add chicken use a rotiserrie from the store. I usually add canned whole tomatoes which I break up, escarole, and whatever other veggies look good. I love adding some of the frozen vegetables from TJ’s, and use their frozen basil cubes to add even more great flavor. Top with some parm cheese & you are all set!

    I love body pump as well. Been doing it/hooked on it since 2003. Love me some Les Mills classes!! Try RPM if you get the chance (Les mills version of spin class). Freaking awesome! Supposed calorie burn of 400-600 calories in ~45 minutes if you are cranking your resistance.

    Just to warn you, 600 calories might be a bit of an overestimate for a BP class. Wear a heart rate monitor just to check it out…I only burn about 250 calories in a pump class and I use some fairly heavy weights. Although you do continue to burn calories well after the class because of your muscles. I always wondered if this is why the instructors tell you that you burn up to 600 calories in a body pump class.

    My favorite all time soup is Tomato Vegetable. I love to eat this especially in the winter! Fresh tomatoes simmered down with reduced sodium chicken broth I add garlic, onions, celery, carrots, cabbage, broccoli and spinach! Of course you can add whatever you like! There is nothing like a nice warm bowl of comforting soup in the winter!!

    MMM. I love soup. I especially love my husband’s homemade Chicken Noodle Soup. It’s to DIE for. The key ingredient is the Parsnips.     My best-friend’s Dad used to make her Grandmother’s secret chicken noodle soup when we were in middle and high school. She always used to share it with me. I asked many times and could never get her to squeal on the secret. Needless to say, I have attempted to make many chicken noodle soups, but none come close to that soup.

    My favorite soup is one I am no longer able to eat due to my switch to vegetarianism! But there used to be n Uncle Tony’s pizza and pasta restaurant near where my mom grew up, and one of the best memories I have is going there for their chicken soup. It had a special name, but I just can’t think of it!!!

    I made a delicious Tuscan Tomato soup tonight! Just blend marinara sauce, roasted red pepers, garlic, olive oil, and white navy beans and heat over the stove! Delicious and it only took a few minutes :)

    Hi Tina! I’m always afraid to go to the Body Pump class at Health Works – it sounds so hard. I think you’ve inspired me though! :)

    My favorite soup is my mom’s homemade navy bean – its so simple with carrots, onions, celery and of course navy beans, but she always makes a loaf of homemade everything bread to dip in it. Yum! :)

    My favorite soup is tuscan bean soup! I just throw a can each of cannelloni beans and diced tomatoes together in a pot with some veggie broth and lots of veggies. So easy and so yummy!

    Hmmm. While nothing beats the combo of Old Fashioned Tomato Soup (especially from Au Bon Pain) with Grilled Cheese, my favorite soup is Egg and Lemon Soup, which is a Greek soup, also known as Avgo Lemono. In a nutshell, boil 6 cups of chicken broth. Add 3/4 c orzo. In a separate bowl combine 3 eggs + juice of 3 lemons. Whisk the egg & lemon combo briskly and consistently while slo-o-o-o-o-wly adding hot broth (not too quickly, or else the hot broth will cook the egg in such a way that it will scramble). Once you’ve added 4 or 5 ladels of hot broth to the egg & lemon combo, add it back to the broth + orzo. The addition of the orzo lends a creaminess to the soup without the added calories of milk or cream. Dee-lish!

    I’ve taken body pump before and my favourite thing about it is the tracks! Haha.

    And that pita combo looks delish.

    Hmm.. I’m not a US resident per se.. BUT I am visiting for a couple months and “residing” here… in a residence :) Do I count?

    If not, I’ll say my favorite soup anyway. Hmm.. wait that’s hard… can I say 2? :)
    I have so many favorite soups… but 2 I REALLY like are Carrot Soup and Hot and Sour Soup.

    It is definitely getting close to soup weather and I have soup on the menu for this weekend!

    My current favorite soup is the low-fat chicken noodle soup at Panera Bread. I ask for croutons on the side and add them in for some crunch. It never disappoints :) I also love butternut squash and good ol’ Campbell’s low-sodium tomato soup mixed with milk.

    345..dang- In any case, my fave soup has got to be Pacific Foods brand Butternut Squash…or maybe its (shocker!) V8 Brand Broccoli! Yum, both are souper (lame I know- but I had too!) delicious especially on a chilly day!

    I love my moms chicken noodle soup, she boils a whole chicken for hours, boils down the liquid to make a stock, cleans the meat off the chicken, then adds noodles, peas, carrots, onions and the meat back after skimming off the fat. It’s divine on a cold day!

    I love thick vegetarian stew-like soups. Some favorites are my boyfriend’s lentil soup (topped with a dollop of goat cheese) and New England Soup Factory Eggplant Parm soup.

    NOTHING beats my mom’s matzah ball soup! light and fluffy matzah balls, chicken soup, lots of root veggies. yum. but it’s a once a year deal…so the rest of the time, i stick to tomato soup or chili. chili is soo easy to make a big batch of and have it for delicious and healthy lunches all week! it’s a winter staple :)

    my favorite soup is potato leek or lobster bisque but i did make a pretty bangin root veggie soup the other day…

    i roasted parsnips (love em!) with red onion, garlic, SP, some thyme, rosemary, paprika possibly a dash here or there of other herbs haha. then blended with plain soymilk, quick, easy and delish topped with greek yogurt and scooped with TJ’s whole wheat pita chips!

    my favorite way to eat soup is to heat butternut squash soup with those fresh ravioli you find in the refrigerated section, green peas, SHARP cheddar cheese, and a TON of freshly grated black pepper. its AMAZING! i first tried it as a sample in Trader Joe’s, and i’ve been hooked ever since.

    One fall, I went to a cottage in Vermont on the lake with my family, and in the dining room (which was filled with stonework and fireplaces), they served the most amazing creamy tomato soup. My mom and I always wish we could either go back or re-create it!

    My new favorite soup would have to be curry butternut squash. You roast a squash and onion for about an hour. Add squash and onion to blender perhaps add a little cream and curry powder and blend. It is super yummy and fast!

    I love carrot soup. I just boil carrots, garlic and onion in chicken broth with bay leaf and then when carrots are tender puree in blender or food processor. Add back to pot and reheat with a little olive oil. Serve with a drizzle of olive oil and some sour cream or greek yogurt on top. Yum!

    I love pumpkin curry soup. My Mom makes it and it’s phenomenal. Also, we take some of the apple butter we make from scratch after apple picking and put some on top of the soup. It may sound strange, but it’s delicious!!!

    I love a good bowl of black bean soup, but it’s hard to find it in a can without bacon or ham (although I think Amy’s makes a vegetarian one). It’s really great when it’s made with the right spices, cilantro is key! One of the heartiest, most comforting soups, and so filling.

    I love lentil soup – it’s so simple to make too! Lentils, chicken or veggie broth, some carrots, onions, garlic and voila! I’ll sometimes throw in some cumin and/or cayenne. Blend it up or leave it chunky.

    is chili considered a soup? cause that’s my favorite one to make. it’s never the same twice, sometimes I use beans I cooked in the crock pot, sometimes I use canned beans. sometimes I add corn. I always add a dollop of sour cream when serving it. It’s quick, easy; every time, I think I’ve made enough for leftovers, but somehow, my family always ends up polishing it off!

    Houlihan’s Famous Baked Potato Soup (Houlihan’s use to be in Fanuiel Hall in Boston)

    5 cups potatoes, skin left on and diced into ½’ pieces
    ½ cup butter
    2 cups yellow onions diced
    ¼ cup flour
    5 cups warm water
    ¼ cup chicken base
    1 cup potato flakes
    pinch of salt
    1 teaspoon dried basil
    ½ teaspoon Tabasco sauce
    1 cup heavy cream
    1 cup milk

    Optional:

    Shredded cheddar cheese
    Cooked, crumbled bacon

    Dave’s Note / variations:

    If serving to people who are not fans of onions I puree the onions before adding them. I also use a Braun hand mixer to partially puree the soup when done since we like it more pureed than chunky.

    Instructions:

    Steam the potatoes over boiling water, covered for 20 minutes until easy to pierce with folk, set aside

    In a large saucepan, melt the butter. Add the onions and sauté on low heat for 10 minutes until the onions are transparent (don’t allow the onions to brown) Add the flour and cook 4-5 minutes stirring well until the flour is absorbed

    In a separate bowl combine the water, chicken base, potato flakes, salt, basil and Tabasco. Add to the onion mixture stirring constantly so no lumps form. Cook on high heat until the potato flakes dissolve. Add the milk and cream stirring until smooth and lightly thickened. Reduce heat and simmer for 15 minutes, do not boil.

    Add the steamed potatoes and stir to combine. Heat through and serve. Serve with shredded cheddar and crumbled bacon if desired.

    My favorite already-prepped soup is the cashew carrot ginger soup that Pacific brand makes. My old favorite soup recipe used to be a Lemon Chicken Orzo soup that I think I’ve got my hubby addicted to, but with a recent decision to become vegan I’m going to need to find something else :)

    I love taco soup! I don’t have a specific recipe. I just throw whatever I feel like at the time in a crockpot and let it simmer. Most of the time I use different kinds of beans(I really like black beans right now), tomato sauce, and corn. Then add taco seasoning…yum. I need to make some of that soon.

    I LOVE Cooking Light’s Chicken Chickpea Stew. It is really easy to make, really hearty, and good for you too!

    Chicken Chickpea Stew
    Yields:
    6 servings (serving size: about 1 1/2 cups soup and 1 tablespoon cheese)

    Ingredients:
    Cooking spray
    1 cup thinly sliced celery
    3/4 cup diced carrot
    1/2 cup chopped onion
    2 garlic cloves, minced
    4 cups fat-free, less-sodium chicken broth
    3 cups marinara sauce
    1 cup canned chickpeas (garbanzo beans), rinsed and drained
    3/4 cup uncooked ditalini (very short tube-shaped macaroni)
    1/2 teaspoon freshly ground black pepper
    8 ounces skinless, cooked boneless chicken breast, cut into 1/2-inch pieces
    6 tablespoons shaved fresh Parmesan cheese

    Preparation:
    Heat a large stock pot over medium heat. Coat pan with cooking spray. Add celery, carrot, and onion to pan; cook 12 minutes or until tender, stirring occasionally. Add garlic; cook 30 seconds, stirring constantly. Add broth and next 4 ingredients (through pepper); bring to a boil. Reduce heat, and simmer 12 minutes or until pasta is tender. Add chicken to pan; cook 3 minutes or until chicken is tender. Sprinkle with cheese.

    My favorite soup is Butternut Squash Soup. Its so easy and filling. I just roast a butternut squash, garlic, and whatever other vegetables I choose (shallots, onion, celery) in the oven for about 45 minutes. Next, blend together with your broth of choice, and a thickening agent if you like (milk or cream) and you’ll have the perfect fall meal!

    What an awesome giveaway! My favorite soup is definitely lentil. I started eating it pretty often when I became a vegetarian. I’m no longer a strict vegetarian, but I’ve retained my love of this soup.

    Body Pump sounds super motivating and fun! One of my favorite classes at my gym is Body Sculpt, which integrates weights and cardio bursts. We also use heavier equipment, which, I agree, is very empowering!

    My fav soup is Jamaican Red Peas Soup.
    3 cups of kidney beans, soaked overnight in water or 2 tins of canned beans
    1 1/2 litres of water
    2 regular onions
    2 scallion (spring onions may be used as a substitute)
    2 carrots
    2 teaspoons of dried thyme
    1 hot pepper (ideally scotch bonnet)
    1 teaspoon salt
    1 teaspoon black pepper (ground)
    1/2 lb potatoes
    1/2 lb yam
    1/2 cup coconut milk

    Flour, water and a pinch of salt to make dough for spinners.
    If you are using fresh, dried kidney beans then soak them in water overnight.

    Place the beans (including the water they were stored / soaked in) in a large saucepan and add the water.

    If you are using meat then add the meat at this stage too.

    Let simmer for one hour.

    Chop the hot pepper, potatoes, onions, scallion, yam and carrots in to small pieces
    Mix flour and a pinch of salt with water until it has the consistency of dough.

    Pinch off a small amount of the dough and roll it in your hands to make a “spinner”.

    Add the spinner to the pot, repeat until you run out of dough.
    Add the rest of the ingredients

    Let simmer for one more hour

    Does Healthworks do the Les Mills BodyPump class? My gym does those here and I was less than impressed with the class. May have been the instructor, the weights I used, or just an off day. I burned 200 calories and left feeling like I barely got a workout. I’ll have to try it again to get a full opinion though ;)

    My boyfriends grandmother is from Italy, and she makes the best chicken & bean soup. My BF is diabetic so it happens to have basically NO carbs in it at all and is absolutely delicious.

    It’s just a simple chicken broth with large pieces of chicken in it, LOTS of chick peas, carrots, green beans, and celery. It’s simple but she always adds an extra ingredient to make it delish!

    Ketchup soup!

    1-1 1/2lbs lean ground beef(cooked)
    1 small head of cabbage(I used cole slaw mix already shredded)
    3 small cans of low sodium chicken stock
    2 cans of mixed veggies
    1/2 cup orzo pasta
    1/2 cup ketchup
    1 can diced tomatoes

    Simmer for 15 to 20 mins

    I think my favorite would have to be corn chowder soup – even though it’s more of a chowdah, it’s so creamy, delicious, and the perfect year round soup!

    Every Thanksgiving, our family friend makes a sweet potato peanut butter soup. Like you, I just love my nut butters, and this soup is thick, nutty, sweet, and fabulous!

    My favorite soup is white beans and rapini. I make it at home and it’s just delicious! All you need is garlic, shallots, olive oil (saute), add rapini and vegetable stock, then let cook for a while. Finally add in pre-cooked white beans and season with salt, crushed red pepper, black pepper and parmesan cheese.

    I love, love Fitness Magazine! And I love, love SOUP! In Boston, there is a Vietnamese Restaurant that has the BEST chicken noodle soup! It is PHENOMENAL! I highly suggest it! (It is called Pho Pasteur). Best soup on earth!

    I love my mom’s version of the ever popular cabbage soup.

    Cabbage Soup
    1-2 lbs. ground beef or turkey (as much as you like, I use 1)
    1 onion, chopped
    1 green pepper, chopped
    2 Tbsp. sugar
    2 tsp. salt
    1/2 tsp. paprika
    1 Tbsp. chili powder
    2 c. raw potatoes, chopped
    3-4 beef bouillon cubes
    1-2 cans diced tomatoes (I use 2, fire roasted , garlic flavored)
    1 c. raw carrots, chopped
    1 small head of cabbage, chopped

    Brown ground beef or turley (drain grease, if any). Add everything EXCEPT CABBAGE. Add 1 quart of water. Once soup comes to a boil, simmer over low heat for one hour. Pour in another quart of water and return to a slow boil. Add cabbage and simmer for one hour until cabbage is tender.

    You can spice it up any way you like, I tend to change my spicing depending on my mood.

    I’ve taken a few body pump classes and worn my heart rate monitor – I only burn ~200 calories. There is no cardio so my heart rate doesn’t get up very high. I’m so bummed :( I was really hoping for 600!

    my favorite soup is lentil soup! i usually just throw lentils+veggie broth+veggies in a pot, season with cumin and whatever else sounds good and simmer. it was my husbands introduction to lentils when we first started dating and now we eat them at least once a week! (although not in soup-form because we live in louisiana where we can only eat soup two months of the year)

    My favorite soup is tortellini soup! My grandma makes it every Christmas and it has cheese tortellini, tons of vegetables, and a yummy vegetable broth. Wish I had the recipe, but its grandma’s little secret!! Awesome giveaway though!! =)

    My favorite soup to buy is V8 Garden Broccoli or Amy’s Organic Butternut Squash Soup! :) They are BOTH amaaaaazing.

    My favorite soup to make is my Grandma’s Beef Vegetable! I’ve accumulated my own recipe from it using vegetable stock, boca meat, whole kernel sweet corn, peas, stewed tomatoes, and chopped carrots! Holy YUM!

    traditional vegetable soups cannot be beat for easy weeknight meals! i make mine on sunday night and just re-heat and eat most nights for dinner (or i enjoy a smaller portion before dinner.) to make, i sauté one vidalia onion with carrots, celery and a little garlic. then layer the flavors, starting with diced red peppers, shredded green cabbage, fresh kale, and mushrooms. next, add one can of diced tomatoes, one small can of tomato paste and an entire container of chicken or vegetable broth. the tomato paste makes the brother almost as thick as traditional tomato soup, which i love. but if you don’t like it so thick, using less tomato paste would still intensify the flavors nicely. enjoy with a few shavings of parmesan cheese!

    I hope this isn’t too late…Fitness is a great magazine. They always have great tips! My favorite soup is split pea with lots of vinegar!! I usually buy Amy’s but this year I’m going to attempt to make my own. Earlier this week I made some pumpkin and black bean soup that was delicious!
