First of the Season

Mmmmm… pumpkin oats! I made my first batch of the season this morning. :-D

In the mix:

  • 1/2 cup oats
  • 1/3 cup canned pumpkin
  • 1/2 cup vanilla soy milk
  • 2 tsp brown sugar
  • Cinnamon and nutmeg to taste

I garnished my bowl with roasted almond slices and pumpkin seeds.

On the side, I had some Starbucks VIA coffee with vanilla soy milk and agave nectar.

I apologize for such a boring short breakfast post. I’m sort of in a rush to get to a dentist appointment this morning.

I need to have some expensive dental work done before my insurance runs out in 2 weeks. My dentist was nice enough to open their practice on Columbus Day just to complete this work under my current dental insurance, so I can’t be late.

    Oh my gosh Tina… I was literally just in the car on this chilly Monday saying that I should have bought some pumpkin for my oatmeal this morning. It is that time of year :) great minds think alike!

    I’ve tried the pumpkin oatmeal combination only once and it didn’t turn out all that great. However, I love oatmeal and pumpkin so I’ll have to give it another go.

    It doesn’t get any better than pumpkin oats in the fall. And pumpkin seeds to boot! Ugh, dental work! I just had some expensive stuff done too but my gums still hurt so I need to go back again. Dentists=scary for me now! Good luck with yours!

    Would you believe I’m doing exactly the same thing with my health insurance at the moment?! I’m switching down to a cheaper plan at the end of the month so getting all the major work done next week while I still have maximum cover. Ugh, I see pain in my future!
    Also, love your breakfast bowl – so cute!

    Good luck at the dentist. Is it weird that I LOVE going to the dentist!? Probably because they are the nicest people in the world at the office.

    Hey I haven’t commeneted before, but I read pretty much everyday. I’m glad to here that you loved Healdsburg I’m a native and moved back there after college, work in the wine industry to boot. I eat oatmeal 90% of mornings because I can make it in autopilot and copycat your normal peanut butter add it + some protien powder, but I’ve had a couple cans of pumpkin in my cupboard for a year now and never used them. I’m not a pumpkin pie fan. This looks like a great idea. Keep enjoying the wine.

    I had pumpkin oatmeal this morning too. I added some golden raisins for texture and a small squirt of light maple syrup for sweetness. Yummy!

    Your last minute dental work reminded me of when I had to do the same thing a few years ago. I graduated from college, and therefore I wasn’t eligible under my mom’s insurance. I got so much dental work done in two weeks. It is amazing how the motivation of money accomplishes things that you have been putting off for years!

    Oh goodness! Just be glad you did it BEFORE the insurance ran out. I was “forced” to switch dental plans b/c I went from being a student to an employee (don’t ask why they use different companies for the same institution)…so I have “new” coverage. Well, I just had to get a crown, which 1 month ago would have been covered. NOW, it might not be. Grrrr! Sorry yours took so long. I was in and out in an hour and a half…of course, I just have a temporary crown, so I have to go back for the real thing in a couple of weeks!
