I’m so tired this morning. Blah. :-? My adorable dog wanted to be walked promptly at 6 AM despite me getting only 5 hours of sleep. But, as soon as I saw his cute pug face, I really didn’t mind at all. It’s funny how dogs can instantly put you in a good mood! :-D

After taking MP (Murphy Piranha - he’s teething) for a walk, I started my morning with breakfast: cinnamon raisin toast with peanut butter.

I tried a new kind of agave nectar in my iced coffee this morning. The folks at Xagave sent me their product to sample.

Xagave is a blend of agave nectar derived from organic Agave Salmiana (White Agave) and Agave Tequilana (Blue Agave). It tasted like regular ol’ agave nectar to me! Perfect in iced coffee!

I really enjoy crumbling up my tofu in a saute pan and seasoning it like I would ground beef. I then put them in tacos or over a salad. so good!

My fav tofu recipe was one my dad used to make. It involved marinating extra firm tofu, cut into slabs, in some mix with soy sauce, garlic, mollasses, cayenne, mustard powder, ….hmm I can’t remember the rest!!

One of my favorite recipes is tofu marinated in soy sauce, sugar and a bit of sesame oil. Grill or bake, and then top with a sauce made with peanut butter, coconut milk, ginger, soy sauce, and brown sugar. Top with sesame seeds and serve with rice and stir-fried garlic bok choy!

The first time I tried to make tofu it was an absolute disaster and I vowed I’d never mess with the stuff again! Then, after feeling I needed more protein in my vegetarian diet, I decided to give it another go. I drained and sliced the tofu into pieces, marinated them in soy sauce, breaded them with italian bread crumbs and then baked for about 10 minutes on each side. YUM!! I mix the “tofu bites” into pasta, sauteed veggies, scrambled eggs, just about anything!

I love BBQ Baked Tofu, though I tried a tofu stroganoff at a restaurant a few years back and would die to get my hands on that recipe…

I don’t actually eat tofu very often, since my hubby won’t eat it. But I absolutely love to make Pad Thai with Tofu. Yum! Now I’m craving some right now. (I’m pregnant, so I have an excuse!)

I love to use silken tofu in my italian recipes in place of ricotta cheese.. stuffed shells, lasagna, rolled up lasagna you name it :)

Tofu “egg” salad…mix plain yogurt with dijon mustard and add cubes of extra firm (pressed to remove all the excess liquid) tofu (pref. Trader Joe’s brand OR Nasoya!)…enjoy over greens or on toasted sesame Ezekiel bread…

My favorite tofu recipe right now is making a tofu rice broccoli stir fry with TJs Thai Red Curry sauce and this amazing curry powder that I bought at a farmer’s market in Hawaii. I’ve made it twice a week for the last three weeks! its that good. And so easy too! done in under ten min

my favorite way to enjoy tofu is in a scramble with a ton of veggies. and i recently discovered the loveliness of cubed scramble (rather than scrambled scramble)

My favorite tofu recipe is tofu + shrimp with soysauce infused with sauteed-ginger-scallions-garlic mixture. Tofu cubes can be slightly steamed or warmed up in microwave shortly before putting into the mixture.
