62 Days Ago
Sixty-two days ago, I made a list:
- More time
- Better commute
- Cheaper cost of living
- Easy access to the city
- Easy access to gym
- More focus on blog
- Pug
- Travel money
- Healthy food
- Active social life
- Friends and family nearby
- Enough money
- Laundry

At the time, I was feeling pretty down-in-the-dumps about my life. Mal and I had just rescinded our offer on a house and I was totally overwhelmed by my lack of a work-life balance. Even though there wasn’t really anything wrong with my life, I just knew I could be happier. Basically, if I could paint a picture of my “perfect” life, this list would include a number of its elements.
So, 62 days ago, I set out to improve my life:
- I moved closer to Boston for easier access to the city and a better commute to work
- I found an apartment with in-unit laundry and a gym 0.04 miles away
- I finally got my PUG!!! I love Murphy!
Unfortunately, a cheaper cost of living is not likely living in Boston and some of the items on my list didn’t need to be changed (healthy food, active social life, friends and family nearby), but there were still a number of things I wanted to improve– and they all seemed to be tied together. Do you see where I am going with this?
I have to admit that I’ve never had a clear idea of what I wanted to do with my life. (Remember when I almost became a personal trainer?) I also never realized how important it is do what you love. Of course, I had a number of great jobs over the years, but deep-down, I knew none of them were the perfect fit. Plus, sitting behind a desk for 40 hours a week never really “fueled” me, ya know?
Blogging has truly changed my life. When I first started out, I never intended for it to become my career, but I always thought “what if?”

Dinner
Yummy dinner tonight! I love it when you just throw a bunch of ingredients together and the meal turns out well!
I started with the following ingredients:
- Boil-in-Bag brown rice
- 6 oz. jar of marinated artichokes
- 4 green peppers (from my mom’s garden!)
- 1/4 cup grated Parmesan cheese
- Handful of parsley
- Fresh squeezed juice from 1/2 a lemon
- Breadcrumbs

With these ingredients, I made delicious stuffed peppers!

How to: After cooking the rice, I combined it with the rest of the ingredients (minus the breadcrumbs) in a large bowl. I removed the tops of the peppers, cleaned out the insides, and filled them with the rice mixture. I topped the stuffed peppers with breadcrumbs and baked on 350* F for 25-30 minutes until the tops of the peppers started to brown.

They were SO good! And easy to make!

Dessert
For dessert, I whipped-up a Silken Vanilla Cake using Nasoya’s Silken Style Creations. This time, I added peanut butter and chocolate chips to the cake. Holy yum!

I ended up eating a second piece. It was so delicious!

Oh you are teasing us! But I totally get it. I am so proud of you. I have made a list like that many times but did NOTHING about it. Hopefully I can get focused on my goals. I’m currently sitting behind a desk full-time and pretty much bust the door down on my way out because that sort of environment is so not for me anymore.
I am inspired by you, Caitlin, Jenna and others who have really taken HUGE steps in your lives to get to a happier place. I can’t wait to see the next part

Those peppers look great! I recently created a very similar recipe for stuffed portabella mushrooms. I think the only difference is that mine had spinach and no rice. With salad they make a great dinner but I like the idea of bulking it up with rice!

Writing it down and making it happen (i own the book, which i’ve never read)…it’s such a genius idea. And really, why not? You deserve what you WANT in life. SO why not GO FOR IT?! I’m really impressed with those who say “this is not good enough and i’m going to do something about it.” I’m still working on having the confidence to do so, but i know it’s in me deep down somewhere.
