The Best Roasted Broccoli Recipe

Living with our friends has been a serious vacation! All of our “family dinners” seem like an true occasion– complete with cocktails! It’s been really tough for me to turn down delicious bottles of wine. :oops:

Tonight, we enjoyed a wonderful bottle of Veramonte Sauvignon Blanc. I remember this wine from a dinner at Piattini Wine Cafe many months ago. It’s excellent! Light and fruity with a crisp finish!

With dinner, we enjoyed the best Roasted Broccoli recipe, which my sister-in-law first made for Mal and me when we visited her in Seattle last June. I still can’t believe it has taken us this long to make it ourselves!

Ingredients:

  • 2 large heads of broccoli
  • 1/8 cup sugar
  • 2 tbsp olive oil

Directions:

  • Cut broccoli into florets
  • Toss florets in olive oil and sugar
  • Cover baking sheet with non-stick cooking spray or tin foil
  • Spread broccoli florets on baking sheet
  • Broil for 5-7 minutes until edges of florets turn brown and crispy

With the Roasted Broccoli, Mal made Sesame Soy Chicken with couscous and brown rice mixed together on the side.

The Roasted Broccoli was a huge hit! It was crunchy and slightly sweet. Everyone LOVED it!

For dessert, I enjoyed an Oatmeal Raisin Bar, which Marie and I baked last night. Mmmmm!

I cant’ believe it’s back to work tomorrow! After all of the work I did today, I’m relaxing for the rest of the night!

    That recipe is so different. How do the broccoli end up tasting? Are they very sweet or is it just a hint of sweetness? I’m curious- never tried anything like it!

    roasted broccoli sounds amazing. Just as curious as Kat, does that leave the broccoli real sweet or is it mellow out because of the EVOO that you use? sounds awesome :)

    What a healthy and delicious looking meal! I don’t think I’ve ever had roasted broccoli!! I’m going to pass this recipe on to my husband and have him make it for me!!

    We do a similar variation but use a microplane and grate some really good parmasean and a tiny bit of lemon zest over the top right when it comes out of the oven- a great way to add some flavor for not too many calories.

    I really love roasted broccoli, but I’ve never tried it with sugar! I usually just use olive oil and salt.

    His little paw over her is just too much. The broccoli recipe sounds delicious I will definitely be trying that soon since broccoli is everywhere at the Farmer’s Market. I wonder if you could use a different type of sweetener and achieve the same result. Maybe I’ll do some experimenting!

    I love roasted broccoli…and I’ve got another tip for you: try roasted cauliflower! It’s made the same way (but I don’t use sugar), you can also add some parmesan cheese. It’s delicious too!

    I’ve never tried to broil broccoli before. I’ve always steamed it. Roasted broccoli sounds delicious! I am definitely going to give it a try. I agree with Julia, Parmesan cheese sounds like a delicious topper!

    That looks good … but my husband makes a version that I think is even better. He takes a teeny bit of coconut oil and roasts or grills the veggies with some roasted garlic, lemon juice and a sprinkle of parmesan cheese. To die for!

    Both of these recipes sound very good and delicious. I love broccoli and oatmeal. I made oatmeal bars before but not like this. This sound much better. I will try both recipes.

    Broccoli is a good veggie and a good source of calcium. I eat all kinds of veggies. 2yrs ago my broccoli got as big as 2 grown men fists together and it sure tasted good and melted in my mouth.
