Sunday Slacker

August 9, 2009

Man, what a weekend! It was absolutely fabulous, but I am so exhausted from it! I need a vacation from that vacation! I’m feeling like a slacker tonight, so I’m just going to recap my Sunday eats and save the longer Vermont recap for another time. I don’t have it in me to do it the justice it deserves!

Breakfast

The bride and groom invited their guests for a casual brunch at the Edson Hill Manor this morning. I forgot my camera in the car, so I didn’t snap any pics of my breakfast. It was a delicious meal– everything had so much flavor to it. I swear that food in Vermont tastes better than what we normally eat in Boston!

At brunch, I ate raspberry jam and cream cheese-stuffed French toast, scallion scrambled eggs, watermelon, cantaloup, and a piece of banana bread. All if it was outstanding!

After brunch, Mal and I made a special pit-stop at the Stowe Farmers’ Market to stock up on my favorite Vermont-made relish.

I love Claire’s Sweet Pickle Relish! I’m pretty much obsessed with it!

While in Stowe, we stopped for a couple of iced coffees for the car road home. Mal also loaded-up on multiple beverages to rehydrate himself. Someone stayed up until almost 3 AM playing Beruit last night!

I added milk and a packet of sugar to my iced coffee.

Lunch

Lunch was a special treat today: Kimball’s ice cream! :mrgreen: I ordered a “kiddie” size Coffee Oreo, which was humongous, but I didn’t have any trouble finishing it all! ;-)

As always, Kimball’s was PACKED this afternoon!

When we finally arrived home, I hit the gym for a serious sweat session. For my workout, I did 20 minutes of strength training (legs) followed by 20 minutes on the elliptical and 25 minutes walking on the treadmill. Boy, did I need that workout! I feel a million times better now!

Dinner

I wanted to eat some of the relish that I purchased this morning, so I made a tuna salad with tomatoes and cucumbers mixed in. I was light and summery, but really filling and satisfying.

I’m off to search for something sweet and relax with my hubby on the couch.

Good for you for getting a workout in after a long car ride… road trips zonk me so sometimes its hard to find the motivation when I arrive, but of course I feel so much better once I do get one in!

TINA!!! I WAS AT KIMBALL’S YESTERDAY!!!! I looked for myself in the picture you took. :-) Husband and I went and grabbed some burgers and corn from their grill and a little dessert action. Glad you had fun!
