August 2, 2009

It’s been a GREAT Sunday so far! :mrgreen:

My morning started with homemade blueberry pancakes cooked by my husband.

Fresh blueberries in pancakes are truly heaven!

I used a small dish filled with maple syrup for pancake dipping. It helps with portion control, especially since it’s so easy for me to drench my pancakes in syrup.

I wasn’t really hungry after eating 3 pancakes, but Mal twisted my arm to eat the last one. ;-)

After breakfast, I hit the gym for some upper body strength training and a 50-minute treadmill walk while watching Millionaire Matchmaker. I considered running on the treadmill, but I’m giving my hip one more week before I test it out with a short run. I miss running so much! Wah.

Lunch

We had quite a few veggies in the fridge, so a salad was an easy choice for lunch.

In the mix:

  • Romaine lettuce
  • Tomato
  • Cucumber
  • Scallions
  • Red pepper
  • Broccoli (from my mom’s garden)
  • Green beans (from my mom’s garden)
  • Hard boiled egg
  • Balsamic vinegar

On the side, I had some sea salt-flavored Somersaults. I love these things! Best snack ever!

Lunch was on the light-ish side, so I think some ice cream is on the agenda for this afternoon! :-D

I’m on a mini vacation from work until Wednesday! :mrgreen: I’m so psyched to have a couple of days off to get my life in order. And I have some fun and exciting things planned for the next few days, including a Coldplay concert, the Taste of Park Plaza, and a special adventure on Tuesday! :-D

I’m off to enjoy the day! See ya!

mm .. those pancakes look delish! i made my parents some blackberry pancakes this morning and some mango banana smoothies, but i was so busy doing other stuff, i didnt get a chance to try one! its okay though, i had a smoothie and some other stuff later on :D

We like making “special” breakfasts on weekends. The pancakes look great! We have a buckwheat blueberry pancake recipe on our blog that is really good:) Enjoy your days off! I am jealous!

Yum, I love blueberry pancakes! They never fill me up though, so I tend to not eat them often.
You are so lucky to have a few days off, enjoy them to the fullest! I haven’t been able to take a day off since May!

Seriously Blueberry pancakes are the BEST!!! It reminds of living at my old apartment when my roommate/cousin and I used to make them on Fridays and then go on a long bike ride……. I miss those good ole days!

I love the look of your pancakes. When I make them I always stir too hard and they turn completely purple. Ooops it makes them more fun I guess. I need to try your syrup trick. I tend to use way too much.

so awesome you get to see coldplay!!! oh man I would LOVE to see them live!

I’m so sorry your hip is still hurting! One thing that helped me was taking ibuprofen religiously for a few weeks. I took 2 pills a day and I think that REALLY helped with the inflamation. hope it’s better when you go for your run!

Great call on the syrup dish for dipping! I love syrup and feel like portion control is super tough…but I’m going to try this the next time I indulge in pancakes or waffles!
