It was much too hot and humid to bake tonight, but I still wanted a sweet treat after dinner. So, I got creative in the kitchen, and I came up with a quick and easy no-cook peanut butter cookie recipe. The recipe calls for only 4 ingredients and takes less than 10 minutes to prepare start to finish. And, of course, no cooking is required! You gotta try this one! 😀

Makes 8 cookies

Ingredients:

  • 1/2 cup dry oats
  • 1/4 cup all-purpose flour
  • 1/4 cup peanut butter (chunky or smooth)
  • 1/4 cup agave nectar
  • Cinnamon (optional)

Directions:

  • Combine all ingredients in a large bowl and mix well
  • Line a baking sheet (or plate) with wax paper
  • Use a tablespoon to scoop batter onto wax paper and flatten into a cookie shape
  • Sprinkle with cinnamon (optional)
  • Put cookies in refrigerator to cool overnight
