That’s Interesting

Lunch was interesting today. Not gross-interesting, but I-am-surprised-this-tastes-so-good-interesting. :mrgreen: I will definitely make this lunch again. It was SO EASY!

Last night, I whipped-up an eggplant, avocado, and cheddar cheese quesadilla for lunch today. I laid all of the ingredients on a Hemp Tortilla and cooked it on our Griddler just long enough for the cheese to melt. It was the last Hemp Tortilla in the bag, so after the quesadilla cooled, I popped it right back into the bag to take with me today. Fast and simple. What’s your favorite quick and easy lunch? I also ate a Cherry Pie Larabar and watermelon chunks with lunch.

I have an iced coffee (or perhaps an iced Americano?) on the agenda for later this afternoon. :-D

I’ve been wanting to cook eggplant for quite some time now, but I have no clue where to begin. How do you cut it? Can you eat all parts or does it need to be cored? I’m clueless :(
I’ve never seen that tortilla before. It looks yummy! Is it available at Stop & Shop or did you have to go to TJ’s?

@Melissa: I just slice them up and throw them on the Griddler (after I spray it down with non-stick spray). I’ll do a video soon! :)

Yummy lunch! I so wanted to buy a loaf of the hemp bread… but it was like $6 :( I couldn’t do it… of course, I pay for Ezekiel bread, so you think i’d fork out the other $1… but can’t seem to do it since Ezekiel products can be a stretch some weeks!

My favorite quick lunch is ants on a log! Ha Ha! I love it, and it works especially well when I’m low on groceries and don’t have time to go to the store either. I usually pair it with another quick favorite: yogurt, fruit and bottom of the bag cereal. Yum.

I really need to try some hemp products. Great lunch. I usually eat at my desk-not fun, but that is life:) I do pack my lunch every day. I love veggie/hummus sandwiches on whole wheat or in a ww pita. So easy. Salads are good too! I usually have fruit/ Greek yogurt for my afternoon pick me up. Soup is good in the winter too. I always pack the night before so I don’t get lazy:) Love your articles! Have fun tonight!

What great ingredients in your tortilla! I seriously would never have thought of adding eggplant and avocado. Do you think baked squash and avocado on a wrap would taste good?

My favorite quick lunch is an omelet with goat cheese, spinach or kale, and onions. I always have those ingredients!

Hemp tortillas! I didn’t know they existed! I’ve tried the bagels and LOVED them, but the price is a bit out of my range.
