Moja Monday

Hi, blog friends! Happy Monday! :mrgreen:

I needed to finish my Health post before work today, so I wasn’t able to fit in a morning post. But, I am happy to report that I ate a big piece of wedding cake and grabbed an iced coffee from Dunkin’ Donuts for breakfast this morning. A breakfast of champions for sure! ;-)

Lunch

Today’s lunch was a little more nutritionally sound than breakfast: Stonyfield Oikos Greek yogurt with MojaMix, cherries, and a ginger snap Larabar from the hostess with the mostess.

In my customized Carrots ‘N’ Cake Mix were lots of goodies. It was more like trail mix than cereal because it was packed with dried fruit, nuts, and chocolate-covered coffee beans.

I found a table outside in Harvard Yard to eat my lunch. It’s a beautiful day in Cambridge! 8-)

    I love fresh cherries! Especially in July when they are in peak season :-) My mini-goal for the week is to FINALLY clean my apartment and strength train x 2.

    We have been loving these lately and you can do them on your indoor grill!! Turkey Burgers: 1 pkg. lean ground turkey, 2 green onions, 3 roasted red peppers, 1/2 c. feta, some fresh spinach chopped (or frozen), 2 cloves crushed garlic, salt and pepper. Grill them – serve on salad greens!!

    That is some packed looking cereal. I am equally grateful for the good weather. I ate my lunch outside today while enjoying a book and was so satifsied by the weather that I actually needed less food to feel full because I was eating so leisurely.

    I have the most DELICIOUS recipe! It is called Goat Cheese and Chive Garlic Bread- I made this yesterday for a bbq with my fam and everyone devoured it!
    Need:
    1 loaf french or italian baguette (or boule)
    5oz goat cheese
    1/2 cup butter (room temp)
    2 tbsp minced chives
    minced garlic (1/4 -1/2 c.) or 4 garlic cloves
    S&P to taste

    Preheat oven to 475. Stir together butter and goat cheese until well blended, then stir in the garlic and chives with salt and pepper to taste. Halve the baguette crosswise, then halve each piece horizontally. Spread cheese mixture evenly over the bread. Cut bread in 2″ wide strips, cutting about halfway through the bread to make serving easier. Set the bread pieces cheese-side up on a baking sheet and bake about 5–7 minutes. Enjoy!

    NOTE: This recipe is by no means “low-fat” but it is scrumptious!

    My mini goal this week is to take a hot bath after dinner each night to unwind. I know it sounds simple but lately, I have been going full steam ahead and really need to remember that down time is an important part of self care.

    mini goal for the week: don’t freak out. I have so much going on before we leave for Honduras, plus Sunday is a very sad anniversary for me, so it’s going to be a tough 2 weeks.

    I’ve already taken care of today’s mini goal. I found out my credit score and talked to my insurance about what I have to do once I buy a new car- which will be happening soon. :) I want to give you my seafood spaghetti recipe, but I need to go home and look it up. I’ll post back later if I remember. :)

    Of course, your MojaMix had choc. covered coffee beans in it….he he! good choice! In fact, I just had some nut mix with some of those in it too …..the best!

    My goal this week is to not overeat like a madwoman at all of my family events this week. My nephew’s bris is Wednesday, and we have a big party Sunday, and I want to enjoy myself and not leave with a belly ache!

    Yay Monday mini goal time!! Mine is to eat clean and no ice cream/froyo. I’m all about everything in moderation, but I know in the coming weekends its gonna be insane! So I need a few days of clean eating :-)
