Grilled Shrimp with Black Beans and Mango

Tonight’s dinner was delicious and summery! 8-)

Dinner started with Mal firing-up the grill to cook some shrimp skewers.

Before grilling, I tossed the shrimp in 2 tsp of olive oil and 1 tsp ground ginger for a light, subtle flavor.

While the shrimped cooked on the grill, I cut a mango into small pieces, cooked 1/2 cup of brown rice, and mix it all together with 1/2 cup of black beans.

Approximate measurements:

  • 1/2 cup brown rice, uncooked
  • 1/2 cup black beans
  • 1/2 lb. large/jumbo shrimp
  • 1 mango, diced
  • 1 tsp ground ginger
  • 2 tsp olive oil

Makes about 4 servings

On the side, I added a simple salad with romaine, grape tomatoes, and cucumbers.

    What a delicious meal!!! Grilled shrimp are one of my most favorite foods of ALL time!!! So jealous you have a grill!!! I wish my parents would buy one!! :)

    I also made kabobs tonight – chicken, red bell pepper, and cubes of sweet onion. Grilling is one of my favorite things about summer!
