Dream Vacations and Blondie Cupcakes

Doesn’t the title of this morning’s post sound delightful? :mrgreen:

So, did anyone else have a rough night of sleep? I tossed and turned all night long, so I ended up skipping my morning workout. I hate that when it happens, but I definitely needed the extra sleep. I’ve been a zombie for the past few days!

Breakfast

Today’s breakfast was a bowl of Stonyfield Oikos Greek yogurt mixed with banana slices and Peanut Butter Bumpers.

The Peanut Butter Bumpers are so GOOD! I still prefer Peanut Butter Puffins, but the Bumpers give them a run for their money!

IMG_2626 As usual, I drank homemade iced coffee with breakfast.

Last night, I recreated my Silken Vanilla Cake recipe, but added 1 tbsp of molasses and poured the batter into a cupcake pan instead of a flat one, which turned out SO delicious! The molasses tasted incredible mixed with the strong vanilla flavor. These babies almost taste like blondie cupcakes! :mrgreen:

I didn’t eat this treat for breakfast this morning, but I did eat a couple of them last night for dessert. ;-)

    The cupcakes look amazing! Okay, I’m sold on this stuff, I need to try it asap.

    I would definitely like to travel to Fiji at some point in my life. It sounds so exotic and breathtaking.

    My next vacation would be to Italy! I would go to Florence, Rome, and Venice…tasting pizza, gelato, bread, wine all the way. haha

    That cupcake looks so delicious and so moist–I am going to look for those silken creations at my grocery store. I want to bake tonight now!

    I did a blog post on this recently. Bon appetit is doing a culinary tour of South Africa in October. Its around $9k per person without airfare, so its not quite doable but looks AMAZING!
    I LOVE the silken chocolate. I will have to try the vanilla next.

    It would be a world tour if cost was not an issue, but certainly include Australia, Figi, Tahiti! I couldn’t leave out time in Tuscany – it’s a foodie paradise!

    I would totally go to Europe for at least a month and just travel everywhere there that we want to go: France, England, Spain, Italy, etc.

    Haha! I’m addicted to Peanut Butter Bumpers. I bought them for my 2 year old niece and ended up eating more of the box than she did! But I agree – the puffins still win out.

    If I could go anywhere I’d definitely choose GREECE! I’m a Greek girl that’s never been!! Hopefully someday…

    An Around the World trip, I would love to take a year off and just travel the world. I have been luck enough to have been to some amazing places in the past few years and just spent 2 weeks in Italy for my wedding/honeymoon.

    That’s so hard! I would definitely want to go to Europe but I’d have to hire a bodyguard or my Dad would kidnap me and refuse to let me go. He’s so paranoid after watching Taken, haha. I want to go to Greece so bad! But I also want to go to Africa, so I think I’d take 6 months and do both – oh, and Australia! Haha, I guess I just want to go everywhere.

    Ooh that cupcake looks so good. I made blondies for the weekend festivities, and I had to freeze the leftovers. I couldn’t keep my hand out of the cookie jar!

    My next vacation would probably be to New Zealand. I have been to Europe a number of times (although… I’ve never been to Greece and that would be awesome!!), but New Zealand is in a part of the world I have never visited at all. I’m all about going somewhere totally new to me.

    I have always wanted to go to Africa – I think because the landscape and culture is so drastically different from ours, and thus so fascinating! – or Greece to see my husband’s homeland!

    I had a terrible sleep last night too! I was tossing and turning until 1 AM and then I finally just got up and did some work. I didn’t fall asleep until 3 AM. Nice to know I wasn’t the only one!

    My next vacation would be South East Asia and hit alll the hot spots – China, Japan, Thailand, South Korea, everything!

    Italy and Greece. I’ve been to Italy before and LOVED it. I want to go again and add Greece to the mix:) I rarely sleep well, it is frustrating. I hope you get better zzz’s tonight. Have you ever made your own yogurt? I am going to try it this week.

    Every time I see your iced coffee, I mean to make some of my own! I’m just one thermos short.

    As for a trip, I’d go to Ireland, definitely. I’ve only seen a tiny little corner of it around Dublin and I’m DYING to go back!

    I know this probably sounds weird, but if money were no problem, I would be booking a trip to Antarctica for sure. I have always wanted to go on one of the ships down there to see the penguins in their natural habitat. I’m determined to save up the $10,000+ to get there by my 40th birthday (and before all the ice melts).

    I’m leaving for a cruise to the Bahamas on Friday and I can’t wait! It would be more of a dream if my bf was coming, but since it’s my sister’s bachelorette party, I think we’ll have a blast!

    Seriously… not to be lame… but if I had no financial burden or responsiblities I would plan a round the world trip- from Peru, China, India, Seychelles (b/c I’m dying to go there), South Africa, Australia, hawaii and home… So really it’s more of a horseshoe around the world.
    To pick one I would do Seychelles as our anniversary is tomorrow and we could CHILL! :P
