Eatin’ Healthy

Hi, guys! I’ve had quite a busy night so far, but it’s been productive! :-)

As soon as I walked in the door from work, Mal and I headed out to meet our realtor to look at a couple more houses. I was starving, so I grabbed a juicy peach to hold me over until dinner. 

We had no luck with the houses that we saw this evening, but our line-up for tomorrow night seems much more promising! :-D

Dinner

On the way home from house hunting, we popped into Eatin’ Healthy, a restaurant/cafe that serves “delicious, nutritious food and drinks, made from all-natural ingredients and served fast and fresh.” I’ve driven by this place many times, so I was excited to finally give it a try.  

The decor inside Eatin’ Healthy is bright, colorful, and inviting. I can see myself blogging there sometime in the future– most likely with a cup of coffee. ;-)

The evening turned cold, so I ordered a cup of Mango Passionfruit tea to warm-up. 




For dinner, I ordered the Eatin’ Healthy salad, which was mixed greens, pepper, carrots, tomatoes, red onion, cucumber, sprouts and balsamic vinegar on the side. 

This salad impressed me. The ingredients were pretty standard, but they were crisp, fresh, and plentiful. I ate the entire portion minus a few pieces of lettuce. 

In addition to looking at houses and grabbing dinner with my hubs, I’ve also cleaned the kitchen, put in 3 loads of laundry, and baked a ridiculously, peanut buttery treat, which I will post soon. :mrgreen:

Time to switch the laundry! Enjoy the night, guys!

I totally understand the house shopping thing. I looked for a while but there wasn’t anything in my price range that is safe in the town I work and nothing in my price range with good foundations in the city I go to church. So, I’ve just decided to stay in an apartment…that’ll be easier with my first year as a resident anyway! I would have loved to take advantage of the $8000, too! Hope your houses tomorrow are better and there is one that is just what you want!

hope tomorrow’s houses are better!

do you find light salads like that to be satisfying enough? i feel like i’d be hungry again in no time! but then again, maybe that secret peanut butter treat will come in handy later ;-)

Looks like a fun place. Love the salad, the more veggies the better! Can’t wait to see your PB treat! I made soba noodles with veggies for dinner, it was soooo good. I will post recipe soon!

I can’t wait to see your peanut butter treat! Your baked goods always look so delicious. I love the way you just throw things together; challenged by not having the ‘perfect’ ingredients. I’ve been trying to do that more in my baking, too!
