Breakfast

My morning started with my lovely husband whipping up a batch of pancakes for me! What guy! 😀 I snapped this photo of him because I got such a kick out of his pancake-making set-up: iHome + laptop + iced coffee. Mal definitely got himself prepared! 

Mal makes the BEST pancakes ever! They’re light and fluffy– almost cake-like! :mrgreen:

I dipped my pancakes in 1/4 cup of maple syrup. Surprisingly, 1/4 cup of syrup goes a long way. I was surprised! I also had a glass of iced coffee with chocolate soy milk (not pictured) while Mal was flipping pancakes. 

Groceries

Mal and I are eating out 6 out of 7 days next week, so we kept our weekly grocery shopping fairly small. Since we didn’t need a lot, it was also the perfect excuse to go to Whole Foods. 😉 Here’s a glimpse into our food selections for the week…

Yep, I actually took a photo of our groceries on the conveyor belt at Whole Foods. What can I say, I’m a dedicated food blogger! 

Lunch

By the time we finished grocery shopping and visiting Banana Republic, J. Crew, and the Apple Store, I was famished! Pancakes are delicious and all, but they do not keep you full for long. Boo, refined carbs and sugar! 😡 (P.S. Banana Republic is having some sweet sales right now. I scored a pair of originally $120 peep-toe wedges for just $27! :mrgreen: )

At home, I threw together a salad with greens, grape tomatoes, broccoli, carrots, red onions, cucumbers, balsamic vinegar, and a scoop of leftover feta-walnut spread. The appearance of the feta-walnut spread reminded me of cat food, but it tasted sooo incredibly delicious– lots of feta flavor! Mal finished off the feta-walnut spread by scooping it up with chips. 

On the side, I had a portion of Food Should Taste Good chips (“The Works” flavor), which I liked a lot. This company makes a lot of other interesting flavors, including sweet potato chips, that I am dying to try!

I dipped my chips into some homemade roasted red pepper hummus that I made this morning using my wonderful and amazing VitaMix

I’m debating what to do with the rest of my afternoon. It’s the perfect weather for a run outside, but sadly, I injured my hip last weekend on my long run, so I am taking a week off. Maybe a walk outside is a better option? What are you guys doing today?
