Mal’s Pasta Salad

I’m lucky to have Mal. He’s a good guy, he’s handsome, and he knows the way to my heart is through my stomach! ;-)

I took a yoga class after work this evening, so by the time I got home, I was hun-gry! My wonderful hubby whipped up a tasty (and healthy!) cold pasta salad for our dinner tonight. He definitely impressed me with his culinary skillz

Mal didn’t measure the ingredients as he was throwing together the pasta salad, but he estimated the best he could in case you want to create the recipe yourself.

Mal’s Pasta Salad

Serves 4-6

Ingredients
:
5-6 ounces of whole wheat rotini 
1 green pepper, chopped
1 large head of broccoli, chopped
1/2 cup grape tomatoes, halved  
1/4 cup onion, chopped
1 can of black beans, drained 
1/2 cup Italian dressing  

Directions:
Combine all ingredients in a large bowl. Serve cold.  

I topped a bed of greens with a hearty scoop of Mal’s pasta salad. The meal was excellent– very summery! 8-)

For his good work in the kitchen (including washing the dishes!), my husband expects to be rewarded. He’s now chanting: “peanut butter cookies… peanut butter cookies!” as I type this! So, I’m off to do a little baking.

    Aww Mal is too sweet. I love it when my hubby surprises me with dinner. He started doing this as a monthly thing and even schedules it into our google. I love it!!!

    You should hint hint this idea to the hubby. ;)
