When I was in South America, I accidentally ordered the "special" at a small restaurant and ended up with... COW SKIN! It was essentially slices of fat served over rice. Odd, it tasted fine, but the texture was indeed strange. Chewy and gelatinous at the same time. Rocky Mountain Oysters, (aka bull testicles); pretty good, tasted like liver, sort of.
