Hooray, Pecans!
April is National Pecan Month! How exciting!
So, what’s so great about pecans?
- Pecans contain more than 19 vitamins and minerals – including vitamin A, vitamin E (a natural antioxidant), folic acid, calcium, magnesium, phosphorus, potassium, several B vitamins and zinc.
- One ounce of pecans provides 10 percent of the recommended Daily Value for fiber.
- Pecans are a natural, high-quality source of protein that contain very few carbohydrates and no cholesterol.
- Nearly 60 percent of the fats in pecans are monounsaturated and another 30 percent are polyunsaturated, leaving very little saturated fat in pecans.
- Pecans are naturally sodium-free, making them an excellent choice for those on a salt- or sodium-restricted diet.
- Pecans may even help lower cholesterol and support weight loss.
- Pecans are delicious and they make a great addition to oatmeal, salads, entrees, and desserts.

I’m sure you’re not surprised that this morning’s breakfast included those amazing and wonderful pecans!
In the mix:
- 1/2 cup dry oats
- 3/4 cup vanilla soy milk
- 2 tbsp ground flaxseed meal
- Strawberries
- Lots of pecans (cooked in and on top)
So good!
And satisfying!
Tuesday’s Dinner
Last night, I ended up having a great workout at the Y, but by the time I got home, showered, made dinner, ate dinner, and got settled, it was much too late for me blog. I was pooped! So, now you get to read about my dinner bright and early today!
Dinner was a homemade pizza made on a thin crust Boboli with marinara, shredded cheddar and mozzarella, sliced ham, Sasquatch Jerky, and pineapple chunks. The combo of flavors was de-lic-ious! This was one of the best homemade pizzas I have ever made!
I’m usually not much of a meat eater, but the ham and Sasquatch Jerky added a TON of flavor to the pizza.

For dessert, I ate my favorite treat: a toasted Sandwich Thin with almond butter and peanut butter and chocolate chips. It was heaven like usual!

Thanks for getting me hooked on those Boboli crusts, Tina! I bought a thin one last weekend and the pizza turned out great. As far as your question, I would say intelligent, although I’ll admit that sometimes I fantasize about being a VS Angel LOL… How sweet of a job THAT would be!

Between both of those options, I’d actually rather be known for having a positive influence on someone’s life and being a good person. But if I had to pick beauty or brains, I’d much rather have the brains — Then I could figure out a way to get some beauty thrown in the mix, too

For some reason I can’t get myself to like Pecans… I love most other nuts (peanuts, almonds, cashews, pistachios), just not Pecans. Hmm.
And I’d rather be known for my intelligence, although I know people who have appeared to get further in life with the beauty haha. But I like what Shannon said about a third option

Pecans I could take or leave, but Hawaiian pizza I can definitely get on board with! Isn’t it delish? Don’t let anyone tell you it’s gross, there are too many people out there who are afraid to try it, but it’s their loss bc it’s soo yums

ok ok ok just kidding. Intelligence for sure. In fact, I used to hate it when guys would always tell me I was beautiful, but never say anything like “great point” or “you’re a smart girl” or something like that. Who cares if he thought I was pretty if he thought I had rocks for brains!!!!

Hmmm, beauty or brains? I would love to have both- but to choose one over the other, I guess it would have to be brains. I feel like no matter what, women aren’t satisfied with who they are. If you are beautiful you may wish you had more brains and visa versa. However, like someone said above, I wish I looked like one of the VS angels! That wouldn’t be such a bad gig! LOL!

I’d rather be known for both, however I used to do high fashion modeling, so honestly when someone compliments me on something to do with my personality or intelligience it means so much more to me than complimenting me on looks. I think looks don’t say a lot about you, so intelligence and personality is more important and should be valued more.

I would like to PC about it and say Intelligence but honestly it is both.
BTW Tina, you totally inspired my bfast this morning lol. I had Kashi Oatmeal with chopped strawberries, Cinnamon Puffins, 1 tbsp of TJ almond butter, and sprinkle of splenda…it was soooo delish! I gave you a “shout out” on my blog =)

I love pecans!!!! I think if I had to pick, I would be both, HA! Can I pick both? Okay, if I must pick one, I would have to say my interrligence. I think if you are intelligent, beauty comes with it. I don’t know if that makes any sense, but when I was single (that was a while ago)and first started looking at dating, I like any other young person looked for the most good looking people around to find that not all of them were that great. I then met someone who wasn’t the most attractive person but he became more attractive to me because of his intelligence and personality. Okay, I think I went on way to much about this….
