Guest Post: Healthy Mexican

I absolutely love Mexican food, especially California Tortilla! While trying to fall asleep last night, I decided that I would try to make my own healthy variation of a burrito bowl.

I started the dish this morning by soaking 1/2 cup dry black beans in water. When I got back from class 8 hours later, I threw it into a pot with fresh water, letting it boil then simmer, mixed with a bouillon cube. In a pan, I stir-fried 1/2 onion and a few baby bell peppers with some PAM spray.

Finally, I put together the bowl:

  • a bed of steamed broccoli
  • medium carrot (chopped and microwaved for a minute until soft)
  • black beans
  • onion & pepper mix
  • handful cherry tomatoes
  • tbs medium salsa

… and voila, a delicious end to a long day

I’m wierd, I think I’m the only San Diegan that doesn’t love mexican food, lol. Except some really good fajitas, mmmm.
