What a breakfast!!! I found this recipe in Self magazine (March 2009) the other day. (Supposedly, it’s Anna Kournikova’s recipe.) The original recipe made 18 blinis, which was WAY too many for me, so I halved the recipe and made some minor changes to it. 

So, what are these blinis? Honestly, I had no idea, but they looked delicious to me! From Wikipedia:

A blintz, blintze or blin (plural is ‘Blinis’ Russian) is a thin pancake. It is somewhat similar to a crêpe with main difference being the fact that yeast is always used in blini, but not used in crêpes.

I topped my blinis with banana slices and maple syrup. They were SO GOOD! The blinis were soft and sort of chewy like a crepe, but thicker like a pancake. Holy yum! 

Banana Blinis A La Tina 

Makes 8-9

Ingredients:

1 egg
1 cup milk
1 tsp sugar
Dash of salt
1/2 tsp white vinegar
1 cup all-purpose flour
1/2 tsp baking soda
1/2 tbsp butter (for pan) 
1 banana
Maple syrup  

Directions:

  • Mix egg, milk, sugar, and salt in a mixing bowl. Add vinegar, flour, and baking soda. Mix well. 
  • Melt butter (I used Olivio) in medium skillet over low to medium heat.
  • Pour a thin layer of batter into the skillet.
  • Fry until golden. 
  • Flip and repeat. 
  • Top with sliced banana and maple syrup.

Banana blinis with half of a glass of iced coffee– I drank the other half while cooking blinis! 😉

The lighting in my apartment stinks! It’s not doing this amazing breakfast justice! I swear they were very scrumptious! :mrgreen:
