Another One of THOSE Weekends

Good morning!! :mrgreen:

So, it’s another one of THOSE weekends when I have a million things going on!

Saturday

  • Baking, breakfast, blogging
  • Cleaning
  • Yoga
  • Gym
  • Shower
  • Hasting Pudding show
  • Dinner in Harvard Square
  • Meet up with friends 

Sunday

Early Morning Baking

I woke up with the itch to bake this morning. (I know, I’m weird! ;-) ) I had a huge can of leftover pumpkin sitting in the fridge, which is always such a delicious and nutritious baking addition, so I made a batch of Pumpkin Oatmeal Raisin Bars

I mostly followed my original recipe, but made the following changes:

  • Instead of 1/2 cup, I used 1/4 cup of canola oil
  • I used 1 egg, instead of 2
  • I added 1/2 cup of canned pumpkin
  • I used 1 tsp of cinnamon
  • I added a shake of nutmeg and pumpkin seeds to the top of the bars

The Pumpkin Oatmeal Raisin Bars turned out wonderful, but I prefer the original recipe– I think the extra canola oil adds to their yumminess. 

In addition to my Pumpkin Oatmeal Bar for breakfast, I also had some Stonyfield plain yogurt with Peanut Butter Puffins.

And hot coffee with agave nectar and chocolate soy milk…

Friday Night

I was a lazy blogger last night. :oops: I barely took any photos, but here’s a quick recap of the evening:

  • After work, I went to Happy Hour with my coworkers. I drank two beers and munched on a few French fries.
  • Next, I headed downtown for a friend’s 30th birthday. At the bar, I drank another beer, but I wasn’t feeling the bar scene. At 9:30, I headed home (like the old lady that I am) and went straight to bed.

    Those bars look amazing! I LOVE anything with pumpkin in it! I love the addition of pumpkin seeds on top as well, delicious!

    Do you think instead of just cutting the oil, you could sub some applesauce for the remaining 1/4 cup? I’m nowhere near the baker you are, but I’ve had decent luck subbing applesauce in the past.

    Yoga…i feel bad-i promised myself i would do a few challenging yoga classes a week, but have just been doing Lunar Flow and my PM yoga DVD. I am loving the way my body is feeling though and plan to do some tougher ones this week!
