I had some strange dreams last night! Unfortunately, now that I am awake, I can’t remember them at all, but I’m pretty sure muffins were involved somehow. I woke up thinking about and craving Heather’s Barney Butter/Almond Butter Chocolate Chip Olive Oil Muffins. Before I even got into the shower, I sunk my teeth into one of those bad boys! I just took a bite, and crumbled the rest on top of my oats. 
In the mix:
- 1/3 cup dry oats
- 1/4 cup wheat berries
- 1/4 cup canned pumpkin
- 1/2 cup water
- 2/3 of a Hangry Pants muffin, crumbled
- 1 scoop of Barney Butter
Lunch and Snack Preview
Making my lunch last night made my morning totally stress-free. When I don’t make my lunch ahead of time, it’s a mad dash around my kitchen grabbing random items of food. Sometimes a healthy lunch results; sometimes it doesn’t!
Today’s lunch and afternoon snack:
- Spinach salad with grape tomatoes, snap peas, cornichons (French pickles that Mal has me obsessed with!), and fresh Parmsean sprinkled on top
- Vanilla-flavored soy yogurt with TJ’s high-fiber “twig cereal“
- A dried fig (an amazing new discovery!)
- A ZBar
- 2 chocolate kisses

“2/3 of a Hangry Pants muffin” just sounds funny. I think its the “pants muffin” part. In my tight jeans I think I may have a pants muffin.

I do the same thing with my lunches! I try so hard to pack one on nights before, but if I don’t, I usually end up with something like Subway or a Lean Cuisine because who has time to make a salad in the morning?!
