Squash-tastic!

January 26, 2009

Check out the wealth of nourishment in squash!

I never realized that squash was such a super star! I also didn’t realize that squash is a relative of both the melon and the cucumber. What a happy little family! ;-)

This morning’s breakfast was a lovely bowl of squash oats, made with TJ’s canned squash.

In the mix:

  • 1/2 cup dry oats
  • 1/3 cup canned squash
  • 2 chopped Medjool dates
  • 1/2 cup oat milk
  • 2 scoops of Barney Butter

If you’re interested in learning more about oat milk, which is also a nutritional super star, please see my post from October about it.

Happy Monday, bloggies! Where the heck did the weekend go!?!

Question of the Day

Gotta love how many options there are with oatmeal mix-ins!

Nothing can compare to how I feel, both mentally and physically, after a run. Although I enjoy many forms of exercise, running (especially outside) gives me such an adrenaline rush!

I love how accomplished I feel after finishing a work out. I know I’ve done something good for myself.

I never would’ve thought to add squash to oats! YUM.

My favorite benefit is that it keeps me sane. I’m a crankster when I can’t workout. :-)

Love squash! :D I never knew that about proteins though, I always though nuts and beans provided a good protein source. Interesting. So does that mean tofu and soy are also incomplete proteins?

I must exercise! I feel bloated and yucky if I don’t get at least some cardio in. And if I can’t exercise for a few days I get really cranktastic.

My favorite benefit of exercise is its ability to get me out of a bad mood or wake me up. I just feel very alive and happy when I’m done… probably because I know I’m done for the day. :)

Squash in oats. That sounds delish but I would have never thought of it.

Fav benefit of exercise…when it’s over I feel so damn accomplished and sweaty and strong, it’s a great boost.

My favorite benefit of exercise is eating a well-balanced meal afterward! I tend to eat less, eat slower and all-around have a good meal. There’s something about a workout beforehand that keeps me on track.

Tina, you are genius! Great Oats….. I enjoy sweating and having the pain the next day from exercising.

Oooh! I like the combination of medjool dates and squash. I actually have both at home so I’ll have to try it soon! Thanks :) This is my first time posting, but I love your blog! Where did you get that nutrient information?

My favorite benefit is definitely my mood. When I have a great workout in the morning it sets the tone for the entire day. I have a more positive outlook and am always more productive. And it’s where I do all my thinking and planning for my day/week/month/LIFE! :)

Jasmine (Sweet and Fit) January 26, 2009 at 11:20 am

thats easy! endorphins!

Rachel January 26, 2009 at 11:42 am

I’ll chime in with others and say that my favorite benefit of exercise is that for me, it’s a mood stabilizer. I’ve struggled with depression all my life, and while I am medicated still, regular exercise just makes me more content and easygoing overall. I think it’s an outlet for a lot of negative energy and it helps me be more awake and optimistic.

Wow squash is better then I thought it was for you.
My favorite benefit of exercise is the rush you get afterwards, the feeling pride after you push yourself, the time to yourself to think while running, and the differences you see in your body as it gets stronger.
have a great Monday!

Tina, I finally bought some wheat berries last night and simmered them for about an hour. I added 1/3 c. to my 1/3 cup oats this morning and have to say I don’t think I’m a fan :( It tasted weird to have the two textures and I just am not used to the chew factor. Kept me full though! Maybe I’ll try them in something else…

Andrea [bella eats] January 26, 2009 at 12:39 pm

Great idea with the squash in the oats! I have a can of TJ’s butternut squash in my pantry….

I have to agree with Rose’s comment about exercise…I eat much better when I’m exercising consistently! Its like I don’t want to waste all that effort by eating a greasy pizza afterwards. When I get off track with exercise, I get off track with eating. Double negative!
