Pancake Heaven

After eating brunch about 30 minutes ago, I am still in pancake heaven!!

Mr. Mal has a secret family recipe for making fluffy, cake-like pancakes, and today’s batch was especially amazing! Mal said this batch was the best he’s made in “at least a year!” And let me tell you, they were light, melt-in-your mouth, and decadent flat cakes. HOLY YUM!

I topped my heavenly pancakes with warm maple syrup and raspberries. (How to: Add 1/2 cup frozen raspberries and 1/4 cup maple syrup to a microwaveable bowl. Nuke for 60-90 seconds. Pour over pancakes.) On the side, I had a piece of crispy turkey bacon.

Pancakes with raspberry-maple syrup, turkey bacon, and mug numero dos of coffee…

Butt Kicker

I did a serious glutes workout yesterday! Holy moly! I am so sore today– I can barely sit down! The workout only includes 4 exercises, but the key is to do all of the reps slowly while squeezing your buns and not resting between exercises. I only did 2 sets, but, boy, did I feel the burn!

Reps: 15
Weight: 12 lbs. dumbbells

Why oh why do you tempt us with pancakes we will never have??? (Unless we move to Boston and become superclose with you and Mal.) It’s just not fair. But they do look delicious!

We have the Griddler, too! And my boyfriend has basically started a whole new relationship with it. Have you seen the Tracy Anderson butt workout that Gwynneth Paltrow posted on her website? I haven’t tried it yet, but kind of want to. It seems like it would take 40 minutes, though.
