Oooh, I am loving this Vita-Mix blender!!! It seriously does everything!

Today’s blender experiment was hummus, which came out much better than expected! Not that I didn’t have confidence in the Vita-Mix blender, I just didn’t expect the hummus to be so easy to make and turn out so amazingly! I may never buy commercial hummus again.

Hummus

Recipe from the Vita-Mix “Getting Started” guide

Makes 3 3/4 cups

Ingredients:

  • 2 – 15 ounce cans of chick peas (garbanzos), one drained, one undrained
  • 1/4 cup raw sesame seeds (I omitted these)
  • 1 tbsp olive oil
  • 1/4 cup lemon juice
  • 1 garlic glove, minced
  • 1 tsp cumin

Directions:

  • Place all ingredients in blender in order listed.
  • Blend until smooth.
  • If necessary, use the tamper to push the ingredients into the blades while processing.

After blending the “plain” hummus, I portioned-out about half and added it to a storage container for later. To the remaining hummus, I added approximately 1/2 cup sun-dried tomatoes in their olive oil, then continued to blend.

For dinner, Mal and I shared a plate of raw carrots, cucumbers, and broccoli with both kinds of hummus. We also had some toasted French bread with a small smear of Smart Balance and (sort of melted) smoked Gruyere cheese. Yum, so good!!

Afternoon Snack

After an afternoon full of errands and shopping, I was starving, but dinner was right around the corner. To hold me over, I snacked on a mug of ginger-peach white tea and a clementine. The fruity tea + citrus fruit was a lovely combo!
