Guest Blog: Monterey Jack, Corn, and Roasted Red Pepper Risotto

Hello Carrots N’ Cake readers!

I have been toying around with the idea of starting a food blog for a little while now, and just recently, I started my own (www.foodforliving.wordpress.com). While preparing one of my favorite recipes to make (and eat!) the other night, I snapped a few photos: I give you, Cooking Light’s Monterey Jack, Corn, and Roasted Red Pepper Risotto – what a mouthful (pun intended). The pictures are just okay, but the end result is delicious.

    It’s strange to see these photos from the kitchen in our Houston house! I sure do miss that kitchen, but I’m sooo glad to be back in Boston :)
    It’s ironic that you posted this tonight, because I’m making butternut squash risotto with wheat berries tonight!
