Cheesy Banana Bread

Cheesy? Cheesy banana bread?!? Ok, not cheese cheesy, but cottage cheese cheesy. I swear, it’s good! ;-)

Cottage Cheese Banana Bread

Makes 1 loaf

Ingredients:

  • 2 ripe bananas
  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 cup low-fat cottage cheese
  • 1/4 cup canola oil
  • Shake of cinnamon

Directions:

  • Pre-heat oven to 325*F. 
  • Coat loaf pan with non-stick spray. 
  • Combine ingredients in large mixing bowl. Blend well. 
  • Pour batter into loaf pan; spread evenly.
  • Bake for 32-35 minutes.
  • Allow to cool. Enjoy! 

For this morning’s breakfast, I topped 2 pieces of cottage cheese banana bread with Maple Pecan Spread from Williams-Sonoma, which was on sale. :mrgreen:

I also drank a mug of coffee with chocolate soy milk and agave nectar while blogging earlier this morning.

Tina, that bread sounds so good…and look at all those lovely naner chunks! I’m all about mixing the banana with some cheese. One of my favorite snacks is to slit a large banana and fill it with Laughing Cow light cheese, toss a few carob or chocolate chips on top and warm it in the toaster oven. Delightful! Thanks for the recipe!

I have to say, I was a little hesistant about making this, but figured I would try it anyways just to see. And I was VERY impressed!! It was SO good, even my boyfriend enjoyed it & he is usually the first one to say “is this one of those healthy recipes again..?” It was awesome! And, I even substituted the oil for sugar-free/ all natural applesauce to make it even more healthier :) Thanks Tina- you ROCK!:)

I’m having some issues with the “pouring into the pan” part… I doubled the entire recipe, used olive oil instead of canola, slightly less sugar than asked for and a bit more cottage cheese than asked for (yeah, health freak alert… but I guess I am making banana bread, so maybe not ;) …), but my batter is lumpy and pretty dry. The bananas I used were VERY ripe (basically black, frozen). I’m just going to see how it turns out, but any suggestions for the future? Anything I could add when this happens?

I’ll report back how it turned out anyway.
