Asparagus Cheese Omelette

Breakfast was an easy decision today. Nope, not oats! Last night, I had brainstormed a cheesy asparagus egg white omelette, so when I work up this morning, I was excited to try it out! 

Ingredients:

  • 1/2 cup liquid egg whites
  • 4-5 spears of steamed asparagus, chopped
  • 1 (heaping) tbsp cottage cheese
  • Swiss cheese to taste

This photo makes my omelette look teeny-tiny (weird angle, perhaps?), but it was super filling and is sitting in my stomach like a rock now! 

Also with breaky, iced coffee with chocolate soy milk and agave nectar.

Coffee drinkers: I’m tellin’ ya, you gotta try chocolate soy milk in your coffee. It’s so incredibly sweet and creamy! My iced coffee is almost like a coffee milkshake this morning! :mrgreen:

For sweet treats, I had a dark chocolate Adora disk and a handful of Zoe’s granola.

No matter how hard I try, I just need something sweet after every meal. I swear this habit is genetically programmed into me! ;-)

I’m off to do wedding stuff with my sister this afternoon. All of her bridesmaids are coming to get measured for their dresses, and my sis is making her final decision on the style. I think she is leaning toward a long, dark plum, v-neck style dress for us. Sounds pretty, right? I’ll try to snap a pic this afternoon!

The dresses sound so pretty!! I think one of the weddings I’m in this year may be in that color too! Have fun! I will be trying the choc. soy milk in my coffee :)

soy milk is the BEST for any coffee/tea drink. Ive had soy chai lattes long before I became vegan – the soy milk makes the drink thicker and creamier :) yum!

Hi Tina! I have come out of lurkdom (sp?) to say that I tried your 45 minute treadmill workout the other day and boy did it kick my butt! I loved it. At first I thought it was okay, but then all of a sudden I was sweating like crazy! It was awesome! I did it again today and loved it even more! I’m recovering from runner’s knee and am slowly getting back into running, but I am so pumped to try the running portion of the workout! Thanks so much!

That omelette looks delicious! I love asparagus. I’ll have to try this soon. I think I’m going to Boston during the week and was thinking of stopping by Whole Foods while I’m there. I was just wondering which one you suggest I go to?

i know how you feel, no matter how much I eat or how stuffed I am – I have to have something sweet after each meal. the french call it “friandise” (i think) – the small sweet course after a meal

You’ll have to try almond milk! I HIGHLY recommend Almond Breeze’s unsweetened chocolate. It is amaaazing.

Chocolate soy milk in coffee…really? I’ve tried the Silk creamer before but did not like it all. Maybe I’ll give the choc. soy milk a try as I’m really trying to ween myself on half and half.

I am the same way – always have to finish off a meal with something sweet. Bad habit, but I love it. :)

@Lauren: Yes! You’ll actually be very close to my FAVORITE Whole Foods! It’s on Cambridge Street between the Charles/MGH and Gov’t Center T stops. It’s right on Cambridge Street, but it’s a little set back from the main street.

ohh – good idea with the chocolate soy milk in coffee. I just started drinking soy milk and love the chocolate kind. Will be like a mocha!
